I’ve just watched your back story, what a resilient and genuine man you are. it’s Ange again, I lost my darling husband of 42 years in 2018 my gorgeous mum 2019 I nearly popped my clogs 2020 got Covid , was a nurse. I came out of hospital a month later and my darling brother who was 56 and due to be a grandad collapsed and died helping a retired postman. Words cannot describe the grief over the past few years, watching you lifts my spirits thankyou😊❤

Oh boy you are busy today! I woke at 4:30am Arizona time and you already had 2 videos done! I have never made homemade dressing. Watched mom and we always used ready made stuffing bread cubes in the recipe. Some of the dressing went in the bird and the extra went into a casserole dish. I wouldn't turn any away but first dibs on the dressing inside the bird, it was always so moist. 😎

I started putting whole cranberries in my stuffing 3 years ago. Ppl love it! So many realize, why not? They plump up, the juice gets in the stuffing! No more cold canned cranberries for my family and friends.

We used to stuff the neck with sausage meat and the body with the bread stuffing. If my dad came home with a turkey too big for us, he would cut it down the centre and freeze one half. I got to stuff the remaining half which was a challenge. Nowadays I would just cut the thing into pieces, roast them till golden brown and crispy and do the stuffings separate. Much easier to do and easy to carve.

I can tell you because this isn't a turkey country out here a turkey(already cooked) in the freezer section of one of the wholesalers here 60gbp. Not mush bigger than a 2 1/2 lb chicken. - So I guess it will be Chicken. Thank You. Best, Rik

@chucky2316 nope. Just a normal turkey he got from work as a Christmas bonus in the city(west coast of Canada). We have commercial turkey farms here. An average bird would be 8-10 kg but many are quite a bit bigger. Back East in Ontario, etc., there are wild turkeys.

I saw you said you had breathing issues,well me too,I think all that flour,and cocoa powder in the air,I could roll it off my face at night.I also think the smogs of Birmingham that I grew up in hasn’t helped. I love sausage meat stuffing. Reminds me of my mother's cooking. I still use her recipe. Im lucky having butchers near me whose meats come from their own farms. I love getting their sausage meat. This sausage meat stuffing is also great cold on sandwiches

I have learned so much from your video cooking lesson. I have been rather lazy and making my stuffing side dish from a commercial box mix, but this is in a class of its own. Hum I wonder if I can cook and freeze portions for later reheating portions. I am going to try the make ahead option as only two people in my household but we regularly eat chicken and now ground turkey thigh meat creations like burgers and meat loaves. I am always looking for creative economical options that are fast to get ready for supper.

That's very much like my mom's recipe only the veg are simmered in broth, we use dry seasoned bread cubes and leave the sausage raw. It's more of a loaf style but the taste is the same. Absolutely my favorite Thanksgiving dish since I was a kid. I've been known to carve off a slice and snack on it cold from the fridge.

Both! Had the restaurant the small food outlets. Its a blessing now helping others cook - to be honest its really keeping me alive - I have always loved my work - and a huge love for genuine people. I love a natter also learning from others. Now I'm over 60 the old grey matter is forgetting things - all the folks on here and you are still encouraging me and giving suggestions I love it. Not the same as the rational ovens etc but I love cooking. Hate such a small space - one day a little bigger space - that's what we are working to now! Thank You. Best, Rik

What I will say cooking has taken it's toll. Breathing in all the fumes for 40 years - all the heat on the hands - my fingers etc don't work the same - if something is so small its a job to pick it up. I've just today had to agree to 2 days off and go for a medical - not much of a day off. Breathingt issues with all the fumes. That's life! Work enjoy pay the price.
