As a child from the US who lived in Spain for almost a year, this was my favorite meal in school. Other meals were good but this just hit the spot and I couldn’t get enough.

This is how the school good programs should feed children. Not fish sticks and Mac and cheese But quality ingredients that are not expensive and healthy. But then you would have lazy cooks serving slop instead of a little respectful integrity.

Using bread as a thickener is a VERY old technique; I've found it in (modern redactions of) medieval cookbooks. And it's so nice to find a recipe with a dried legume which DOESN"T require lengthy pre-soaking!

When I was a child I hated lentils, beans, chickpeas, vegetables and fish, now I am very grateful to my parents for educating me on taste. There is nothing comparable to a good plate of legumes, with a little chorizo, ham and bacon for a winter day.

Happy New Year Albert, I live in Australia and I have just come across your KZbin channel and so far I love it. I like the way you give measurements in two different ways, such as 1 cup of lentils, which is roughly 200grms. I also love the way you talk through the steps and don't have weird music, lol. I have never cooked Spanish food before, but your recipes look so yummy, I'm about to give it a try. Thank you for keeping them simple as far as equipment and products go too.

This is a classic Spanish dish. It's obviously fine as it is but open to many variations. You can cook this with added chorizo, morcilla, pork or bacalao. Lentejas (lentils) and potato is a winner.

@@SpainonaFork I made this and it's really good and hearty. I forgot about the tomato sauce so I ended up adding a little tomato paste instead. I have to say, though, grinding the fried baguette with a mortar and pestle takes some muscle.
