I'm pretty sure that's how blue rare is done. Really high heat quick sear on both sides. I'm personally a medium/medium well guy unless it's a really good cut. Then I may dabble in the medium rare side of things.

Definitely Dale should have been gone. There's a stark difference between literally failing to cook a steak even past Blue and having a cut get ruined post-cook by a mistake anyone that doesn't expressly know what a liver is going to do will make at least once.

See when you’re cooking a tomahawk steak there’s more to it than what you already know where Dale messed up at he got too confident and didn’t realize what he was actually trying to do. He didn’t baste his steak. If it was me, I would’ve went with a simple salt and pepper and then put some butter in the pan and butter baste then maybe add those spices or add those spices that he put on and then probably butter baste it. Had he did that he would’ve been set.

I've been told by my fam that I practically eat steak straight off the cow, maybe after it's been passed through a warm room, and I wouldn't serve Dale's steak to anyone besides myself. Even then I'd be kicking myself for pulling it 2-3 minutes early. Don't overtrust meat thermometers, especially when you're a home cook that doesn't use the things as part of your job.

I tried grounded liver in a equadorian resturant. Ground liver let me tell you taste almost stinky like you’ll sense it but it’s still has a hearty meaty taste to it. Also eating liver is very healthy for you for your digestive system. If I can eat it again I would.

I had to do some digging on this one: it has to do with the higher iron content in the liver. Offal’s a lot different from typical meat, which is part of why they’re so tricky.

julie made it so far just by "not being the worst". i never saw her stand out, ever, but the worst quality about her was her brash arrogance and impudence. never acknowledged anything that the chefs said about her dish, and even went as far as questioning their expertise on several occasions. just an unlikeable character all around, which is saying a lot considering that this season was filled with a lot of unlikeable characters (dale, josh, brooke)
