Try avoiding table salt as they can kill the bacteria and avoid using tap water which is chlorine treated. Also use parboiled unpolished non gmo variety rice like Usna or Ponni. I tried a lot of method to get the best result like we make them traditionally in Odisha. The fermentation is little trickier as weather, water, types of rice variety everything matters to get the best result

It's day old cooked rice, Pazhaiya Choru in Tamil, (பழைய சோறு).. its Dravidian customs to put watee on excess rice and consume next day morning breakfast with curd, small Onions, Green Chilli and pickle. All farmers used to have this breakfast ans work hard till Lunch.

In Gujarat Rural Vyara we prepare this almost everyday. It is called 'Bhadku'. Evry hard working labourer has this before work and its so versatile that people have it for lunch and dinner too. Preparation is different byt it's the same fermanted drink.

We have it in Andhra too, an age old recipe usually consumed by farmers back then. We call it "Gangi." At times, we add onions and green chilli to the rice,just as shown and ferment it. Then consume it along with the rice instead of straining. This makes an amazing breakfast called "Taravaani" in some areas of Andhra. So, you see it is not confined to a single place, but many states in India consume it.

In nepal we called this drink "Jaar" we want to drink it but our family doesn't give us to drink so we go to aunty ko batima drink it😁

Well in Himachal Pradesh it's a bit different. We made something very similar to it. It's made with newly harvested rice. Place the newly harvested rice in water overnight or at least more than 6 hours. Then simply simply put it over an open pot and boil it until the rice is completely dissolved. You can remove the above water in the pot when it's boiling to avoid excessive starch. And finally add some salt and it's ready. Its called 'Peetch' here. If you add butter milk(chach) instead of water to make it. It became a different dish called 'Jol'. Well both are very delicious.

Lol we in Assam have been having this from the beginning of time and this is the staple food of Assam and it's nothing new for us. This is poita bhaat and we have the rice along with water with some mustard oil, onion and green chilli.
