It depends on the cocktail and the flavour profile you're going for, but in a restaurant i used to work at we used to use a bit of vanilla milkshake powder instead of eggwhite to get it smoother without faffing about with an egg. Worked alright for sweet stuff like amaretto sours

Tip from a bartender: to get more foam on any sour, DON'T put MORE EGGWHITE in it. Don't shake it dry, shake it with more ice and SHAKE IT much HARDER. Strain it and don't garnish with an icecube, it dilutes the drink more.
