A simple and healthy recipe for soft and crumbly coconut flour muffins with banana and berries.
☝My measuring cup = 200 ml
Ingredients:
for 6 muffins
150 g fresh or thawed berries (blueberries, blueberries)
1 medium banana
40 g (1/4 cup) coconut flour
☝It is better to weigh coconut flour, as it binds a lot of moisture and, if added in larger quantities, can make baked goods dry.
1/4 tsp. salt
1/2 tsp. baking powder
2 eggs
50 ml (1/4 cup) coconut oil (for more coconut flavor, use unrefined)
1-2 tbsp. honey (or other sweetener to taste)
coconut flakes for decoration (optional)
Method:
1. Mix coconut flour, salt and baking powder in a bowl.
2. In a separate bowl, mash the banana until pureed. Add coconut oil, honey and eggs and stir well.
3. Add flour to the egg mixture and mix well.
4. Drain excess liquid from the berries. Add berries to the dough and stir.
5. Divide the dough into the molds and bake at 180°C for about 25 minutes. Allow the finished muffins to cool in the pan for 10-15 minutes.
