Coconut Green Curry and Meatballs | Sarah's New Favorite Meal - The Papa's Kitchen

We cooked this simple yet very delicious meal for the TRIBE at Sarah's house. I couldn't believe it - every single child and young adult LOVED IT. This truly is a 10 minute prep meal, and you use a crockpot for cooking (about 1-2 hours) and walk away and do something else. In The TRIBES house this is a must~ because there's always something else to do. What Nana and I love is that it's a great meal for company, or leftovers! You can even stick it in a Tupperware and take some to work for your lunch. Guarantee your co-workers will be asking you to trade!

OK - - this was a fun afternoon cooking with and for the Tribe. The curry is not real spicy or hot for those wondering - AND the coconut milk is a must because it's slightly sweet and it makes it 'more' authentic to a Thai type dish. Try it - - you won't be disappointed. Let me know how you like it. Oh, and by the way, I did several more meals with them (some on OUR TRIBE OF MANY vlog) but one more for mine. It's coming out September 7th and it's a family traditional dish!!! (we even used this at Sarah and Solo's wedding) So stay tuned for that.

UPDATE to my comment below. I made this for dinner tonight in a pot on the stove. No fancy sloooow cooker needed :) It was the first curry I have ever made in my life and I am seriously pleased with myself :) This turned out excellent. The only thing I did different was to use vegetarian meatballs to make it a meat free dish. My sister who does alot of curry cooking ( from scratch ) was impressed. Thank you !!!!!

Regarding the chicken spaghetti: to save yourself time of cutting the chicken meat off the bones, just boil the thighs until done then drain and debone. The skin and bones just fall off. I do this all the time to save in the refrigerator to make chicken salads.
