This potatoe salad has a lot in it, but that’s the way I like it. I also like chicken in a can. It is so tender with a little sweet taste. Being busy in retirement I think keeps us happier knowing we make the most of life. I am 82 and go out 4-5 mornings a week picking up pantry items for seniors leaving the house many times before 5:00 a.m. I volunteer twice a week at one of the churches that gives out food as well. When my hubby passed I felt I could sit around and feel sorry for myself or I could do something productive. I never dreamed God would place me in this type of ministry.

I did catering for many years. Chicken salad was one of my best sellers. My basic chicken salad was Shredded Chicken, chopped celery, mayo, salt, black pepper, chopped pecans and dried cranberries. I use the hearts of the celery so I can use the leaves too. The celery hearts have plenty of crunch but it is very tender. I sold the salad by the lb and as sandwiches on croissants. I made about 30 lbs of chicken salad weekly by the lb then additional if I had an event. I always used Kraft or Hellmans mayo. I am in KY and can get Dukes now but years ago I could not get it here.

I would totally add cilantro instead of dill on the second version. Maybe with some red onion....it would absolutely go with the avacado and ranch...but it looks amazing

Are used to use the white pepper when my kids were growing up because I didn’t like the black pepper that in using it a lot I learned it actually has a different flavor the black pepper but that’s just my opinion

Papa, we're a Duke's household as well. My oldest son used to throw jars of any other mayo out while I wasn't around. I didn't find out until years later. With four kids, who even has a brain sometimes! Love from SC!

Love chicken salad. I make mine with pecans, grapes and apple with a Pennsylvania Dutch mayonnaise dressing with mayonnaise, apple cider vinegar, salt, pepper and sugar. It is amazing .

Well Papa, I made this to ight for my tea and it was beautiful. I had a tooth removed friday ( it's sunday here) and this was soft but still had texture to it. I really enjoyed it. Thanks for sharing! ✌️
