Serves 4Prep time: 15 mins Cook time: 15 mins Ingredients: 6 Eggs, separated 1/2 cup of Coconut Flour 1/2 cup of Unsweetened Almond Milk or any milk of your choice 2 Tbsp of Coconut Oil, melted or you can use melted butter 1/4 tsp of Salt 1 tsp of Baking Powder Process,1) In a bowl using a handheld electric whisk, beat the egg whites until stiff peaks form, set aside. 2) In a separate bowl, whisk the egg yolks with the coconut oil and almond milk, then add the coconut flour, baking powder and salt and mix those in until combined. 3) Gently fold in the egg whites until thoroughly mixed, then allow the batter to rest for about 5 minutes while you preheat a nonstick skillet over medium low heat. 4) Cook the pancakes in batches (I use a 1/4 cup measuring cup to insure that they are all the same size) and if you’d like, once you add the batter to the pan, sprinkle some blueberries over the top. These tend to take about 3 minutes on each side to fully cook so be patient. 5) Serve with some fresh berries on top and some maple syrup and dig in!

I was just going to say that too. I was on the paleo diet a few years ago and the recipe I found was so dry and dense, the egg whites really help. I'm a diabetic, and I'm cutting back on carbs, now this is a recipe I'm going to try. I love pancakes 😊

+Libra Fleur well, I'm not on a strict PALEO diet but most of the foods that I eat is PALEO.. Not every person who follows the paleo diet is strict.. Not even the strictest paleo dieters, because we all treat ourselves with ice cream, or doughnut every now and again.. The only thing I'm worried about (personally) is if it's 90% paleo than I will make/eat it.

I just made these and they were perfect! I made it just for me, so I cut the recipe in half and it made 3 perfectly fluffy (1/3” thick) pancakes. The texture was coconut, but I love that texture, so it was amazing. Thank you for the recipe.

I was so excited to see this video. My cupboard was stocked with everything except the coconut flour. I sent my husband to Wal-Mart to purchase the flour last night. This morning's breakfast was delicious. The batter didn't quite look like Laura's but the pancakes tasted great. And, the egg white situation was a first for me. It was my biggest challenge.

if you don't want to add the eggs you could just whip up some chickpea water? or something like that, i've seen it being used as a meringue before. As for the egg yolks I'm sure there are plenty of substitutions, just google it.

Adding whipped egg whites to pancakes that don't use the usual flour is my favorite thing ever! Works every time. I usually use oat flour (not because I eat gluten free, I just like to take lil shortcuts to be healthier lol) but I'll definitely have to try it with coconut! They look so delicious

I use a drizzle of maple syrup with butter and blue or black berries and simmer it down to a wonderful keto syrup. Just a table spoon of maple will make a 1/4 cup of syrup taste fantastic. Not diluted at all. Then, you can drown the pancakes and have half the mixture leftover.

If you don't eat eggs, use aquafava (the water from a can of chickpeas). You can whisk it just like egg whites and it will turn into a foam, or into more or less stiff peaks if you add sugar.

I had to add a tbsp of honey, some vanilla & cinnamon because it tasted too eggy and not sweet at all, even with maple syrup on top. Still they were just alright for my taste and all the work that was involved.
