Hi, the trick is to mix the agar agar powder with water and then let it rest for 15 minutes. Next bring it to a gentle boil, then simmer while stirring until it's completely dissolved. Avoid rapidly boiling it. Once the powder has completely dissolved you can add milk, juice, etc. This will prevent the gritty powdery texture you described above. Good luck!

Let your coconut milk can sit for a while to let it settle, then place in the freezer for about 5-10 minutes (no longer) and then open. The cream will have solidified and you won't get and of the clear milk part (keto trick)

The agar agar powder I use is a Thai brand so you can go to Thai Town in East Hollywood and buy in the grocery stores there. Little Saigon in Westminster sells it and they usually stock them right by the cash registers. Also check out, the grocery chain 99 Ranch. As a last resort, buy from Amazon. I can send you a link. Great recipe. Is there a way to help make the layers set evenly? Mine was setting from the outside in, making the corners not stick as well, and the middle was mixing with the other layers :I

Hi! The only thing I can think of is perhaps you're pouring the outside thinner than the middle so you may want to measure it out in tablespoons. Also check to make sure your dish is level. Fill it with water and then measure the depth at the corners and then at the center to make sure it's even. Try starting the liquid in the middle first and then work your way to the edge of the pan. You can easily buy it on eBay. I've only found it in special health-foods shops here, and it's way more expensive here than if I am to import it from e.g. South Korea.

Hi Angela, agar agar is firmer than gelatin and has a certain crunch to it. I am not sure where you live but if you can't find agar agar in the stores or online, gelatin or Konnyaku powder (made from a type of potato) are good substitutes. Good Luck!

Hello, I was wondering if we could use the coconut cream instead of coconut milk, since I heard you say coconut cream and it was written as well so I bought it, but then I realized you used milk? Is it the same thing?

Hi Alyssa, I take a can of coconut milk and then just scoop off the cream from the top. The cream is the thicker portion of the coconut milk. If you are able to buy just coconut cream without the milk, that's perfect! Let me know if you have any questions. :)

Very beautiful indeed. But if I want to make just a plain jelly, do I use the same measure as to 5 and a quarter cups of water with just 2 table spoons of Aga Agar powder? Will it set well? I know very well how to make jelly using the straws one but I have never used the powder. A friend gave me about 10 sachets of powder since she does not know how to use them. We make the jelly using the straws then once set, we grate them and add to milk shake with basil seed previously soak in water. This is very very nice indeed.

Was pretty good actually. I found it time consuming though, I mean it kinda sets fast but it does take a while if you are just going to stay there and wait for it to set. Also, I left both coffee and cream jelly on simmer but although I gave it a quick stir before pouring it, you would still see some chunk of jelly towards the last layers. Jelly was light, not too sweet which I like. My gf and my 2 guests seem to enjoy it. Thanks again for the recipe!

This happened to me the first time I made this dessert too. The timing is sensitive. The existing layer should still be sticky when you pour the next layer onto it. Keeping the mixture warm helps to "glue" the layers together as well. Keep trying! :)

Hi Catherine, poor you...there are so many Viet desserts that have coconut :( You can substitute with regular milk, soy milk or almond milk. I've used soy and almond milk and both are delicious. Hope that helps!
