If I deep fry, I always strain my grease and reuse it as did my mama, mamaw and grandma. But I very seldom do that anymore. Usually when I fry anything I use lard, tallow or bacon grease and I do reuse it. I don't really know anyone that throws used oil away.

Goodness, now I am starving after watching you prepare this feast. 😀. Haven’t used seed oils in several years, just cook in bacon drippings, olive oil, butter or beef tallow. Save all my bacon drippings for gravy and things that need to be crispy, butter and olive oil absorbs into food, and I put excess tallow in jars and trash - same with drippings from ground beef, sop up with paper towel and trash. Turkey, hen and beef broth, I strain and store in fridge or freezer to use as needed.

Dearest Tammy, I’m so glad you mentioned the HIGH HEAT! I watch many Southern cooking shows and all of them cook on very high heat. Being a Northerner, just west of Chicago, this is new to me. I’ve never cooked this way and my family never did either. If I put any kind of meat in the oven, I ALWAYS cook low and slow, 325 degrees. Everything turns out very tender and flavored perfectly. If I fry anything in oil, I keep the temperature at the standard heat recommended. My experience with a higher heat makes food tuff not tender ❤❤

Tammy, I moved and bought my own coop🎉 In my brand new kitchen the last item I need is a toaster oven like I had for years OR I was thinking should I get an air fryer for toast and warming things. Now which do you think is best? I never had an air fryer. Which is best, it’s just two of us.

Talking about grease!!! If I fry potatoes I save the oil in the frying pan with a lid, so I can use it again to fry more potatoes, onion rings, or etc. If I fry chicken, porkchops ,or fish I let the grease cool then put it in a sealed bottle and throw in the trash. I don’t think you can reuse oil with crumbs or bits in it.. Bacon grease I save for a day or two and season my food with it or fry sweet potatoes…fried sweet potatoes in bacon grease is so good. then I throw it out. Your right oil is high. Especially peanut oil which we love to fry in.

I learned how to make gravy pretty young and,the way, my mom taught me was different, and, if, I make it different, I will about mess it up every time. That’s 5 heaping tbs of all purpose flour and, put it in a tall glass and,then, fill it up with cold or warm water and stir it real well before you add it to your gravy. 0:08

We went to Longhorn, my friend had to send her steak back 3 times because it wasn't cooked enough. After getting the steak back for the third time. We accepted the steak went home & cooked it longer. Never again!!!

If I remember right the cut of meat for cube steak is the round steak. They run it through the cuber. I worked meat and seafood for 15 yrs at Winn Dixie!!!

Cubed steak and gravy is one of my very favorite meals, I always have cream potatoes and most of the time either sweet peas or green beans with it ,I fix your granny green beans a lot they are so good ,I made my biscuit cutter out of a deviled ham spread can .my grandmother use to make them out of a dental sweet snuff cans.

I was married in 1970 & all I could cook was fried steak & gravy, biscuits & cream potatos of course, chicken, chops, I battered everything. I think I made meatloaf & Swiss Steak. Have no idea of veggies- Of course the Easy “Cuppa” 1 Cup Cobbler. Peach & so on. My sweet MIL taught me how to make biscuits so her son wouldn’t starve. Good ol Georgia cooking. Didn’t take long to fatten up a little. I still use that same electric skillet.

I just found out I had vulvar cancer and had surgery to get it all but they could not get it all so when it healed have to do radiation.I am 82 getting old is not fun. Thank you for sharing looks so good.

I love cube steak and,then, I love it when, it’s made into country fried steak. We always ate out mostly on the weekend would fix a good breakfast around 11am. It’s funny that we mostly ate out at steak restaurants and, my dad and brother were mostly steak people To me and mom Swiss steak was our steak. What is good about Chinese and Korean people do spice and sweet and sour dishes well. I seen where you went on vacation and you had a little break and, enjoyed your trip.

✍Hello Tammy and Chris and fur babies🐾🐾🐾 Tammy you're cooking one of my favorite meals. My mom always called it Cube Steak when I was growing up in the 40-50s and that's what I've always called it. Tammy you're just fine...the Real deal and not a phony. I like your ❤pants you're wearing. I started watching Malissa's KZbin channel the first time you mentioned it. It usually pops up when I sign in to KZbin but I haven't seen her in a while. I'll have to look for it. She always mentions your cookbooks when she's using one of your recipes or that people can find a certain recipe if they're looking for a certain one. I'd asked her to share a recipe for I believe she called it "Russian Tea" and she said she would but if I've missed her channel I hope she hasn't made it yet. Your dinner looks delicious. We had Arbys' for dinner and it wasn't that good tonight but I can't complain cause my daughter picked up dinner so I wouldn't have to cook. So your delicious meal is making me hungry. I'll have to go grab an orange to eat...ha ha ha definitely not as delicious as your meal but will have to do. You're right about picking on Chris. He's always looking out for you...I love it💞 Hope the girls appreciate the work and the love you put into the meals you cook for them. My youngest daughter learned this week how fast time can change in your life fast. She spent the whole day with her mother-in-law, took her shopping,out to lunch,did a couple of loads of laundry, took out her trash etc. and the next day was out grocery shopping for her and her husband called her from work that his mom had passed away in the night and the staff at the Senior Assisted Home had just found her. My daughter is just devastated and the funeral is Friday. So please add her and her husbands family in your prayers 🙏 Thanks for explaining about mashed potatoes (creamed potatoes) cause sometimes I have a problem with gummy potatoes so I'll use your suggestions.
