From memphis Tn also. I’ve had the icing run off the cake and also have had it turn to sugar. Really have to have patience. I ate so much of the Carmel cake it gave me the cramps. 😬

I am 78. I grew up with mom making this cake icing. She never used the egg white. After I got married & HAD son's, I made this icing & put on popped corn. We called it iced popcorn. My son's loved it.

The icing needs more sugar. You can soften the icing with white karo syrup.

@@CollardValleyCooks hello Mrs Tammy hope all is Well it's well me in Florida,I was looking for Carmel Icying so I saw this Carmel Icing and I was wonder can u just Use White Sugar instead of the Brown or can I use 1 cup White in 1 Cup Brown? To make 2 cups I use to make Southern Carmel when I was Home in Alabama, I forget some of the ingredients my Family's always use White Sugar Special my Grandma and Grandfather they never use Brown I didn't no nothing about Brown sugar at Home of Alabama and my Aunt she don't use Brown, but it's been so long since I made Carmel Cake, AND THE EGG WHITE, what does it's make the Icing do?but I'm going to make a cake for my Cousin because I Old her One L.o.l gotten make 2 and I saw your Chocolate Icying as well so Have Bless Day

She cooked a small amount of it in a cast iron skillet before she added it to the other ingredients (butter,, sugar, Pet milk etc) to make that beautiful, delicious caramel icing. I have fond memories of her giving me the bowls and spoons to lick, after she iced her gorgeous 3-layer caramel cakes! 😃❤️

OH MY GOD...! You have answered the million dollar question I have been asking for over a year. I have been looking for someone to answer the question as far as what the actual texture of the caramel frosting should look like once it cools. From watching your tutorial, now I know that my caramel frosting was cooked the correct way. Thank you Tammy, for demonstrating what the actual "old school" caramel cake frosting is suppose to feel like once it cools...😁🙏

I just celebrated my 70th birthday on 10-15. I had 2 carmel cakes. 1 was homemade. Of course that went first. I have always wanted to make homemade carmel . I will make this icing at Thanksgiving so the rest of family will know what the real deal taste like.

I was looking at the mixer you are using. Do you prefer that style over the stand mixer style, or do you use it primarily for things like this icing? Also, can you double the icing recipe by doubling the ingredients (as long as the pot is large enough)?

Caramel is made by caramelizing sugar in the iron skillet. Brown sugar has molasses in it to make it brown

Using brown sugar and not white.. Wouldn't that be more of a butterscotch like frosting, and not a Carmel? Traditionally Carmel is white sugar browned. Incredible regardless, will have to try this one!!
