Southern Buttermilk Biscuits
3 cups all-purpose flour
3 3/4 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 Tablespoons sugar
3/4 cup COLD butter, cubed
1 1/4 cups buttermilk
Preheat oven to 400°.
In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Cut in the very cold butter with two knives or a pastry blender until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not over mix.
Turn onto a lightly floured surface. Sprinkle a little flour on top of the dough. Pat into a rectangle that’s about an inch thick. Cut out biscuits and place on a parchment paper lined pan with the sides of biscuits almost touching.
Bake 15 to 18 minutes or just until tops are lightly golden. Makes approximately 11 to 12 biscuits.

I used to use all purpose flour, adding all those ingredients until I started making them with seld-rising flour, 1 stick of cold butter, cut up and 1.5 cups of buttermilk, and I make my own buttermilk also. 460° for 12-15 minutes. So easy. Thanks Tom! You're a good teacher!

I'm born & raised in New York, but I think I inherited my love for southern foods from my daddy who was born & raised in North Carolina. I'm also ½ Italian, so i also love Italian cuisine, too. I can't say that I like all types of cuisine cause I don't, but i do like a lot.

MR. TOM a retired school teachers in our church. Where my late husband was choir director told this advice when cooking biscuits make more than you need.take the ones you don't need bake them in oven about 6 or7 min. Let cool and in a good freezer container whe need them take out and finish baking this was some the best advice I receive I'm 86 now and still do it was great having 4 children and a husband that loved biscuits. I really enjoy your videos.

My grandmother showed me how to make biscuits. Her are her instructions. Get a bowl of flour and make a hole in the center of it. Add some lard and mix it together with your hands. When the lard is mixed in it gradually add some milk a little at a time and mix that in too with your hands. And when it looks right pat it out on the table and use a glass to cut into biscuits. Have a cookie sheet with some lard melted in it and when coat the biscuit on both sides with the grease and bake till they look done. Her stove was a wood burning stove and she never burnt anything as long as I have known her.

You can just make the last biscuit by shaping it with your hands so you don't waste any dough! Just put it all together and flatten it same as the others. Mama always made hers by hand----never had a biscuit cutter----and they were perfectly shaped! Of course, she made them every morning, so she had a lot of practice! The last biscuit would be her "little long biscuit," as she called it; she just made it the same thickness, but just a little longer than the others. All were delicious! I have continued the tradition. I don't make them every morning, but when I make them and have a little left over, I make the "little long biscuit" like Mama did!

First of all, thank you so much for sharing your recipes. I recently subscribed and I truly enjoy watching you make all kinds of delicious food. I attempted to make your buttermilk biscuits but I’m disappointed to say they didn’t come out the way I had hoped. I’m not sure where I went wrong but they tasted very bland. Maybe you can help with some suggestions? I followed your recipe, but didn’t know which type of butter to use so I chose unsalted butter. I’m thinking that might be it? I also used a toaster oven for baking instead of my gas oven. I baked about 15 minutes and they came out a tad too dark and crispy for my liking. Please note I don’t have a cooking/baking background so I’m sure it’s something I’m doing wrong. I’m looking forward to making your chocolate cake and brownies as I’m a chocoholic too! Thanks again.

White Lily is the best flour. I know you didn't ask me, but I just had to tell you. It is wonderful. I also use it to make cakes. It's just the best. The bag says it's made from soft winter wheat and makes excellent cakes. Doesn't cost any more to get the best! (Just my opinion, of course! Try one bag. I think you'll like it. My best friend said "you made a believer out of me!" after I told her what brand I use.) Edit: There is a recipe for biscuits on the back of the bag and I use that. I always use self-rising for biscuits.
