Texas Sheet Cake Cookies - Subscriber Sunday #6- Fudgy Chocolate Cookies with Fluffy Frosting -YUM!

Texas Sheet Cake Cookies
To make the cookies:
1/2 cup milk chocolate chips
1 1/2 cups all purpose flour
1/4 cup unsweetened cocoa
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 stick softened butter (not margarine)
1/3 cup sugar
1/3 cup packed brown sugar
1 egg at room temperature
1 teaspoon vanilla
1/3 cup buttermilk, at room temperature
3/4 cup chopped pecans
Preheat oven to 350°.
Sift together the dry ingredients, except for the sugars. Set aside.
Melt the chocolate chips in a microwave and allow to cool. Cream the butter and sugars until they are fluffy. Add the egg and vanilla and the melted, cooled chocolate and blend well. Add buttermilk and the dry ingredients, alternating these two until mixed. Add pecans.
Place by scoops on a prepared cookie sheet lined with parchment paper or a mat.
Bake in a preheated 350° oven for 8 to 10 minutes.
Allow cookies to cool thoroughly before frosting. 
To make the frosting:
6 tablespoons butter, melted
1/4 cup milk
2 tablespoons unsweetened cocoa
1 teaspoon vanilla
2 cups powdered sugar
Optional: finely chopped pecans for garnish
Sift the dry ingredients together.
Melt the butter and let cool.
Add the milk and vanilla to the butter. Gradually add the liquid to the dry ingredients until the frosting consistency is achieved. If desired, sprinkle with finely chopped pecans for a garnish.

@@joannsomers2406 these additions would enhance the richness of the chocolate. I would probably use a teaspoon of coffee granules/powder. I make chocolate zucchini brownies and for a 9x13 pan I add 2 teaspoons of cinnamon to that.

I use to set up our churches Sunday evening dinners. I have hard time watching people paw food to get the best one. So everything I did that was individual servings I wrapped in plastic bags ( cookies or cupcakes) or foil(sloppy joes). Dirty hands, plus whatever else they didn’t wash hands. This is a recipe I will be trying .

Fun fact: sugar is considered to be a wet ingredient because a) it melts in the heat of baking, and b) because it dissolves at room temperature in water and some other liquids, and therefore it doesn’t increase the volume of the product like flour would.

I used a 2Tbs scoop, made 24 cookies and I will glaze them there so transport won’t be difficult. The glaze will transport easier than me guarding them in this warm weather.

I am from San Antonio Texas so of course I love Texas sheet cake! I will definitely make these cookies because they’re easy portions when you have company. One thing that I’ve learned in my 77 years, L O L, I quit using that type of sifter. I couldn’t get it dry enough and it turned a little rusty. I use my large strainer, and it works beautifully and easy to rinse and dry.

I love Texas Sheet Cake, it is a great recipe to take to cookouts or reunions. I remember my aunt making it at a reunion and my mother got the recipe.
