Reminds me of 'mi soa' a chinese dish, my late dad always made , but he used little dried ebi instead of shrimp. And the type of noodles is different too. Eventhough my mom can also made it, but he rarely cook, so yeah.

I just saw this as I was searching for Korean Air (saw what you ate on your 14hr flight - amazing!). Going to Seoul for the first time next year and want to see what Korean food is about. This was so satisfying and just before you added the fish sauce I was like, do Koreans use fish sauce in their noodles at all and wham bam thank you so much you added it in!!! Not sure how paneer would taste in this, but soft tofu is a very common ingredient in Korean soups!

Always so healing to hear you and see your food journey. Wish I can get this kind ready packet in France but kinda hard to find. I used to replace with dried shiitake and kombu when I don't feel making a pretty good broth from scratch

Or you can do what I did today and got out some instant gomtang ramyun. Removed the ramyun noodles and replace with kalguksu noodles. Instant bastardized gomtang kalguksu!
