I love it when a cook cleans/ tidies up during cooking. It's very important to have order when cooking, and saves time regarding the washing up.

The chashu is how they serve it at the specific shop in the title of the video. I went to a place in Yokohama that had 8 pieces on top of the soup and a dish on the side with 4 pieces on top of a small bowl of rice.

.......i have a suggestion after you fry the Pork why not fry off the chicken wings in the same pan with the fat rendered form the pork till the get a nice golden colour this will add a nice sweet chicken note to the broth, deglaze the pan with some mirin or water and add to the other stock ingredients (after you drain the water from the initial boil, i don't know why this is done must be a traditional Japanese thing) nice video.

Is the measurement of the Bonito flakes correct? It says 20g, but I only used 10g and it still looked like way more than what you put in. Plus the whole thing tasted way too fishy because of the bonito flakes, rather than adding a hint of flavour.

"Kansui" sometimes sold in liquid form at asian grocers. A good alternative is Sodium carbonate, take some bicarb soda, spread it on foil and bake it for an hour at 120-150 degrees Celsius (250-300 Fahrenheit) it'll drive off water and carbon dioxide and you'll get sodium carbonate which is more alkaline. Getting alkaline noodles right can take a bit of experimentation.. you've got to figure out what will work with your flour and baked soda instead of kansui.

alkaline powder is baking powder that's been baked for i believe 100 degrees Celsius for about fifteen minutes

You can use baking SODA (not powder) as an alkaline powder. As someone already mentioned, sometimes people will bake the baking soda. The chemical reaction that happens makes the sodium bicarbonate to sodium carbonate which is more alkaline. I'm not sure what chemical compound his alkaline powder contains. You might need to experiment and adjust the amount of baking soda so that the chewyness is correct to your taste.

Pork is traditional in Chinese and Japanese cuisine but you can use whatever meat works with your diet. The thing is flavorful cuts. I use bone in for all meat stocks. Beef more rich, chicken more light. It occurs to me that even lamb while not traditional to the area might be lovely. Veal might give the closest approximation to the pork though I had not considered that before. I personally don't eat veal produced by modern methods but will eat that harvested in the traditional manner, meaning the yearling male cow on a dairy farm. Much richer in taste and more to my taste in terms of farming methods.

I think the chashu braise, for all intents and purposes, was the tare, in this case. He just added to the soup instead of to the bowl.

Mirin is effectively Sake reduced with sugar, this is why real Mirin is alchoholic (unlike many of the Western pretend brands). Easy to make your own and it keeps indefinitely.
