Also, would it be possible to just remove the suspension levers from the cockpit?

You are able to remove the suspension levers, but if you do not want to get new top caps and lockouts, the suspension would be fully open all the time.

How hard would it be to give maintenance and remove the rear shock?

Removing the rear shock is actually pretty easy. Disconnecting the lockout is the most challenging part, but the removable shock cover gives you plenty of room to see the shock and get tools in to change it.

I hate it when they hide the shock. It’s dumb.

It can be a little harder to work on. but it does protect it from the elements, and it keeps the frame looking nice ;)
