I’ve found mint works with a lot of continental cured meats quite well, when paired with something along the flavour profile of pico de gallo and some plain crisps for crunch (lamb and mint crisps were what I used originally but they were a limited edition for the bloody coronation)

Lived in perth all my life, never knew this sandwich was unique to us! Now I'll feel pride as I dig into them.

I find that biting vertical rather than horizontal to the plane of the sandwich can ameliorate the worst of the ooze when working with theese sorts of overstuffed treasures.
