Oh my god. I just remembered that this is the video that got me into cooking. I cooked this for my family in my old kitchen as a 15 year old and I was the first person to flambé in the kitchen. Everybody loved the food and said how proud they were of me for cooking this. 4 years later I will start working in a restaurant in London with 2 Michelin stars that has been voted best restaurant in the UK according to world's 50 best. Life's a crazy thing. Thank you so much Alex, you made me find my passion.

A french chef would brown the butter more.. a french chef wouldn't put a porous mushroom under the water like so.. a french chef would't cut the shallot like a dick.. These are not "a french chefs " qualities... basting with a saucjng spoon?? NOPE .. that AIN't it.. maybe like a french cook... No chefs anywhere in this video.

Brothers Green Eats An odd little place called Belgium. Take this video, add peeled, quartered potatoes boiled in generously salted water, and you've got a standard Belgian home-cooked meal. We'll even add in some 'putain de saucisse' to go along with your 'putain de poulet rôti' ;-)

I just made this recipe, and it was delicious! I had to make some changes (red onions instead of shallots, basil instead of thyme, no reduction) but it still worked great.

you shouldnt Cook acid stuff *for a long time* like you shouldnt make tomato or sweet&sour sauces in it. sprinkling White wine on it and reducing for two minutes won't harm the patina

It just depend on where you are in france.. In the northern part of france since they are more celtic they really like butter or salt butter and in the south they are more latin so they are more into olive oil.

Charlie Lucas you still shouldnt wash them, best way to clean mushrooms is to lightly clean them with a brush

It's fine to rinse them quickly and then pat them dry, the mushrooms won't absorb a huge amount of water. But you obviously can't soak them.

It's okay if it's just white or brown mushrooms, as they aren't as fragile. Just dry them afterwards.

ECgames if you don't wash certain types of mushrooms, you get a mouthful of sand and dirt. Of course you wash mushrooms.

it's way too much fat... no self-respecting french chef would serve meat with that much skin/fat on it with a cream sauce (esp. after letting the veggies soak up all that butter/oil/schmaltz)... and for any meat that sauce has way too much double cream in it, not cooked and reduced properly. that chicken has a higher fat-to-meat ratio than a duck breast. there is a reason why they tend to pair the fattier meats with tart citrussy sauces and lighter sides. cream sauce goes with a lean steak or a leaner piece of poultry.

This brilliant chef was on Jamie Oliver's channel and the food especially the lamb stew curry was amazing!! You did very well to get him to do some cooking tips!! This reminds me of a chef cooking sabich.
