Oh my god. I just remembered that this is the video that got me into cooking. I cooked this for my family in my old kitchen as a 15 year old and I was the first person to flambé in the kitchen. Everybody loved the food and said how proud they were of me for cooking this. 4 years later I will start working in a restaurant in London with 2 Michelin stars that has been voted best restaurant in the UK according to world's 50 best. Life's a crazy thing. Thank you so much Alex, you made me find my passion.

you shouldnt Cook acid stuff *for a long time* like you shouldnt make tomato or sweet&sour sauces in it. sprinkling White wine on it and reducing for two minutes won't harm the patina

It just depend on where you are in france.. In the northern part of france since they are more celtic they really like butter or salt butter and in the south they are more latin so they are more into olive oil.

It's fine to rinse them quickly and then pat them dry, the mushrooms won't absorb a huge amount of water. But you obviously can't soak them.

it's way too much fat... no self-respecting french chef would serve meat with that much skin/fat on it with a cream sauce (esp. after letting the veggies soak up all that butter/oil/schmaltz)... and for any meat that sauce has way too much double cream in it, not cooked and reduced properly. that chicken has a higher fat-to-meat ratio than a duck breast. there is a reason why they tend to pair the fattier meats with tart citrussy sauces and lighter sides. cream sauce goes with a lean steak or a leaner piece of poultry.
