RECIPES:
+ Garlic naan bread recipe (I substituted dairy milk for coconut milk): cafedelites.co...
+ Black eyed pea falafel (via the Seeking the South cookbook: rstyle.me/+h6M...)
INGREDIENTS (Black eyed pea falafel)
+ 2 cups black-eyed peas, soaked overnight
+ 1/2 chopped fresh parsley leaves
+ 1/2 chopped cilantro
+ 1/2 cup chopped red onion
+ 1 green onion
+ 4 garlic cloves
+ 1/4 cup olive oil
+ 2 tablespoons lemon juice
+ 1 1/2 tablespoon baking powder
+ 1 tablespoon of coriander seeds
+ 2 teaspoons cumin
+ 2 teaspoons curry powder
+ 1 teaspoon red pepper flakes
+ 1 tablespoon salt
+ 1/2 teaspoon ground black pepper
DIRECTIONS:
+ Chop & combin ingredients
+ Blend in food processor or blender
+ Roll into ping pong size balls
+ Fry in oil in in an air fryer (I fried mine in the air fryer at 380 degrees for about 12 minutes)

I love falafel to. I use them as meat substitutes for me when I cook meat meals for my kids. As a snack I love big lettice leaves, hummus, cream cheese, pesto, and falafel.. Then roll and eat... Delicious.
