A very nice cooking lesson for a nutritious meal! I just wanted to share something I discovered as a person with thyroid issues... soaking your beans with a small piece of Kombu (a dried seaweed) adds naturally occurring iodine to your food, and as an added benefit is supposed to cut down on the gaseous effect of beans! My mom said, when she was running late on cooking for the evening and she knew Dad and others coming in would be like where's dinner? She would always relax the house and the situation of a man's heart by always just putting on some Onions and Herbs or Garlic and everyone coming in the house would be happy and relax! LOL HA HA! She was a smart woman.... Sneaky trick!

I love that apron! Are you suffering from allergies? The beginning of this video was a little painful. I was thinking you seemed nervous or something.😆 You didn’t start to relax until you threw that thyme in, and I said, “there she is! There’s Jess!”🤣

I've been awful for a month. I started getting an ear infection before everything shut down, so I was able to see an actual human doctor and get antibiotics. Taking high doses of antihistamines for weeks isn't the best, but it's way better than trying to take care of everyone and everything when you can't breathe, can't see, can't hear, can't talk...

And she gets nervous about cooking which there is no reason for. I suggested that she do cooking videos with items out of her garden because I did not know the options of preparing what is grown in my own garden. Southern/Country cooking when times are hard have become a lost art with the new generations.

I can't get tomatoes paste in a tube, so I buy larger cans and freeze whatever I don't use. Just put extras in a freezer bag and press and freeze flat. Super easy to break off a chunk the next time you need some.

I usually roast cherry tomatoes and freeze them in small amounts so I can use through out the year in soups and casseroles.

For the none meat eaters, liquid smoke is another perfect addition for a dish like this when youd normally add bacon or some meat for a smokey/ depth flavor.

I wished I liked it, but to me it awful. Even cooking over a campfire the flavor is Okay, but any reheated leftovers at home are awful. I don't even like smoke cheese anymore, that was always a favorite at Christmas time.

Even tho we have 3 children, we're now a family of 2 ... after retirement. Bean soup, & most any soup, freezes well. I make a big pot regularly & put about 6 qts in the freezer for later. As a matter of fact, we had vegetable soup for dinner this evening from a batch made about 2 months ago.

You can make a simple, flavorful broth from veggie scraps you save in the freezer in a gallon bag every time you chop veggies - celery, onion, and carrot tips and ends, onion peels, herb stems, bell pepper tops, mushroom stems, Swiss chard stems, tomato peels, garlic ends and peels, even beet peels! Simmer for 30 mins to 1 hour and strain. Save your scraps guys! If you want a meat broth, save your bones in a bag in the freezer until you’re ready to make broth.

I do too. I just dollop however much is left around in a Ziploc and freeze. Then I can just get out a teaspoon or two at a time.

I feel recipes are just suggestions you can add or subtract ingredients to make it your own. Just as with your garden don't be afraid to experiment. Have fun and get the kids involved.

I like that she told us WHY she was making the choices she did. For example, adding bacon, tomato paste, and paprika to focus on a smoky flavor profile! Sometimes I see recipes and they tell me to do something in a specific order or add a strange ingredient and I can't understand why they do it like that. Now that I know more about cooking and have experimented around quite a bit, I know it's to release the aromatics, etc. But at the time it just seems like extra steps! Thanks for being so beginner-friendly!

Thank goodness my grandma & Mom taught me how to cook from scratch. Jess I love All your videos. They are sssooo helpful & appreciated!!! I try not to watch the news but it's getting bad! Way to stay ahead of the curve! It's one thing to make a video about recipes created with processed food. It's the reality of the situation that many will soon have to learn the lessons that our great-grandparents had once mastered.

That used to be one of my all-time favorites to make minestrone with a crusty French bread with a dipping oil. Alas, I discovered that lectins and grains were both doing a number to my gut health, and now I can only try to remember what that great dish smelled and tasted like, while I eat a bland, boring meal. Something tells me you are an outstanding cook.

Same!!! I have always cooked with lots of legumes. Now neither my husband nor I can have them. Northern beans were our favorite! Excellent for cooking on the cheap and for several folks in one pot or to have leftovers. Precooking with a bit of baking soda then draining the water and rinsing before the actual cooking is an old technique some say helps with the lectins, but we cannot have them for other reasons. There’s also a Spanish herb called epazote that is said to help much with the after effects of consuming legumes. I have never found it where I live in the US, but I wonder if it helps with the lectins. It may be something for some folks to consider in order to add legumes to the diet. They are so good for you in so many ways. Unfortunately, they are absolutely not on my list of less than twenty foods I can eat for now due to the insane actions and reactions of my mast cells.

@@lindaglover9248 it is like rock salt that has been smoked so it is a dark brown color and very smokey and I plan to figure out how to make it myself soon. I am not sure of the brand because a friend gave it to me in a zip lock bag

Loved the cooking video. For folks that are new to cooking, please believe its science, but not rocket science. Don't be fearful or intimidated. Also, the greatest find I ever made was the bouillon powder in "Ham" flavor, as it gives a fabulous smoky flavor when you don't have actual bacon. I am southern and we make a lot of bean soups and pots of boiled greens (collard, turnips, mustard.) Our standard flavor base is equal parts ham base to brown sugar, 1:1 ratio. So for every cup of liquid you add 1 tsp of bouillon and 1 tsp of brown sugar. Satisfies the sweet and savory needs. Best wishes to you all!

I just found you and am thrilled I did! You have shown me amazing ways to repurpose things! I immediately planned my garden using parts of an old bunk bed! Lol. Ik you said you don't like cooking videos but maybe sometime you could show us some of what you do with your garden hauls? Drying, freezing, canning, salsa, etc. and then maybe how you use those things later? Just something I'd LOVE to see from you! Thanks for everything you do!

Thanks for the post. Bean soup is one of our favorites. I add carrots, onions and ham chunks but next time, I'll be adding collards, kale and chard. Don't know why I haven't tried that sooner....guess I was just following my mother's recipe. Like when I asked mom why she wrapped the ham in a towel to put it in the refrig. She replied, " I did it cause my mom always did it." She didn't know why so she asked my grandmother, her mother who said, "Cause my mother always did it. We all assumed that since my great-grandmother didn't have a refrig....it was the best way to keep flies off it. Oh well. Stay well !!

This reminds me of the old half ham story! Same tracing back generations to find why they always cut their Easter hams in half. They found it was because great-grandmother had a very small oven... LOL makes me giggle every time! Thanks for sharing!

A few days ago I was talking to a friend about our mom's bean recipes. They used to throw in a few smoked neckbones and a bay leaf in the pot and ladle the results over rice. We used to gobble that up! Had no idea our moms were working with a budget. Back then, the neckbones were free from the butcher, a bag of beans cost about 25 cents and the rice maybe $1.00. The whole family was fed, with seconds, and everybody stuffed!

I dehydrate my tomatoes skins after peeling for canning. It makes a nice tomato powder to add to soups and things.

When you were talking about the kale I started wondering if you had a video about storing things from the garden after they’re harvested. If you don’t I think it would be a great video (or even series) just explaining how you store different things from the garden and how long they typically keep. This will be my second year having a garden and I really don’t know what to do with most of our stuff that we can’t use right away. We froze some broccoli and green beans and canned some different tomato sauces but that’s just about all we know so far. Thank you for making great videos!

Kaylyn Mueller I dehydrate spinach, Kale, celery, carrots, potatoes, mushrooms, peppers, tomato skins etc. Some I powder, just crush and leave whole, makes soup so easy a handful of and that add broth, you have soup.

Trader Joe’s has a very good powdered vegan “chicken” seasoning in their spice isle. That would be a great option as a broth sub as well

You can get smoked salts too! The larger crystals are smoked with whatever wood then ground up to use when you want that Smokey flavor

From my knowledge you want to add a couple splashes of vinegar/apple cider vinegar to your soaking beans because that is what helps those beans not have a negative affect on your body. It's easy and doesn't hurt to do even if it isn't actually giving you the benefits. :)

Yes, definitely. It is also great if you have kidney sensitivities to soak your kale and collards in cider vinegar overnight before you blanche them. My experience is you still get the nutritional benefits without the digestive challenges. Thanks for reminding us of this.

Funny timing just cooked mayocoba beans in instant pot took 10 minutes. We grew up on bean soups and fed a large family so these memories of soup feel like love since your parents have passed. Good memories for the kids to have

Jess, Save those Kale stalks for juicing or smoothies. I pop them in the Freezer in a Freezer gallon bag. Kale you do not have to flash freeze first. Better than Bouillon makes a great veggie base as well for your plant based subscribers.

Hey! Tip for folks that want fresh bread (or any bread, since stores are struggling to keep it on the shelves! As flour and yeast are also in low supply) You can actually buy frozen "loaves" of bread from the freezer section of your grocery store. Look near the frozen rolls and biscuits. Spray Pam on bread pan and a piece of plastic wrap, put loaf in pan and drape plastic wrap (Pam side down) over pan at night (or morning, whatever) and then bake when it has risen.

If you save all of your veggie trimmings and herb stems in a bag in the freezer (I do it until I get a full bag) it's very easy to turn those items into a delicious homemade veggie stock! THEN they can go in the compost. It makes even more use out of your garden harvest and gives you more broth to have on hand. Super simple and zero waste! :)

Another add that I use since I also dehydrate for my stores is to take some of my squash and make a purée to dehydrate into chips that I then use as opposed to tomato paste (for a variety) by adding a handful of those squash chips to my beans …or any soup. Another fabulous way to use all the bounty that squash gives us.

One of our dogs is diabetic, so we have a cabinet w a mega collection of beans ❤️. Hubby cooks for our dogs too.

Ashley Feinberg, how tall are they? My pink celery plants don't seem to be growing much at all. They're maybe 3 inches long, super skinny and flopping all over. Wondering if this is normal.

Julie B I found starts, stuck them in a raised bed one foot apart, and they grew. Ignore talk about “blanching.” Unnecessary.

Karen M Doesn’t sound good. Mine are about 18” tall (including greens) and sturdy. I did amend with rotted steer manure/ compost mix.

I buy the cans of tomato paste and freeze what's extra in 1-2 TB dollops on a silpat. Once they're frozen I store them in a ziploc baggie. When I need some for a recipe I just pull out a dollop or two and through it in the pot. Easy peasy! Mostly because I can't always find the tubes, and sometimes the cans are way cheaper.

I've been making so much soup in my instant pot lately. We've had chilly, rainy weather here on Cape Cod. I've also been making batches of dried beans in my instant pot. It only takes 30-40 minutes, no soaking, and plenty to freeze for later. Tonight I ground some wheat to make a batch of bread, but after dishes and kombucha bottling, I decided to wait to make bread in the am. Lol. It's a great time to share these type of videos😊

I love the tip about dehydrated tomatoes replacing tomato paste. I do make my own paste for lacto-fermented ketchup, but I think the powdered route would be a great space saver for seasonings

I made hamburger stew. Its freezing cold here in April! It is very delicious and simple. Just simmer diced potatoes, 4 to 6 big red ones, 4 to 5 sliced carrots, small diced onion is optional, and a pound to pound and a half of hamburger bite size pinches if making a bigger batch and simmer all if it in 1 large can of whole peeled tomatoes. If need larger batch, add another smaller can if whole peeled tomatoes. Cut the tomatoes up in the sauce pan before adding the rest of the ingredients. Add water to cover and simmer 45 minutes or longer until all is very tender and flavorful. Note: whole peeled tomatoes just have way more flavor than diced tomatoes. This keeps and reheats well. Typically in my family, we are buttered bread with grape jelly on it with this savory meal. It just compliments each other really well!

I use canned tomato paste and after I use what I need I roll the rest in plastic wrap and freeze it because it’s cheaper. 😊

I love bean soup but you’ve enticed me into making it myself ✊🏾 BTW you are correct on the benefits of soaking bean. They contain phytic acid which effects the body’s mineral absorption and may promote mineral deficiencies. Also, I take it stirring is important since you said it twice ☺️ Great video Jess!

I like to make a lot of creamy soups. Quick saver tip - buy heavy whipping cream and pour into ice trays. Once frozen pop out and put in freezer bag. Gives you about 2 tbsp of cream which is about the right amount for a creamed soup or vegetable dish. Also, for those using coconut cream in recipes, you can get the coconut cream in powder form so it has a great shelf life and is not canned (which can cause a weird taste, at times.)

Making black eyed peas and pork soup today! Since I didn't soak my beans last night I am doing the quick soak method... Just put in a medium sized pan, cover with about an inch of water and bring to a boil. Leave it for a couple minutes, then turn off the heat. Let them soak for about an hour or so, then proceed with your recipe. 😀
