You could, but either would make for a chewy crust it wouldn't be crispy like the cereal

This looks delicious! I know the whole point is that it's vegan, but could you substitute the vegan cream cheese and coconut cream with dairy cream cheese and whipped cream?

Yes!! You absolutely could, the cream cheese will sub exactly the same. With the whipped cream (or cool whip would work) don't beat it in with the hand mixer, fold it in at the end more gently so you don't lose the whipped part
