1 tbsp coconut or avocado oil for frying

1/2 tsp coriander ground

14 oz can coconut milk full fat
6 oz can tomato paste or 28oz can crushed tomatoes
2 cups green lentils uncooked & rinsed
3 cups water or low sodium broth
Cilantro and/or green onion or cherry tomatoes for garnish
Jasmine rice for serving
