Only remove the pan from the heat source after 50% of the garlic turned brownish, u shud not have under-cooked problem. After remove from heat source, the garlic will continue cook in heated oil.

I store my garlic oil, ginger oil, chilli oil etc on my kitchen shelves at room temperature. If store at the fridge, all the oil are frozen solid making it very difficult to scoop. Made sure the garlic is cooked until all the water is evaporated and submerged in oil on storage container and it will last a long time.

The trick here is take out the garlic together with the oil when it’s 50% browning, bcos after u took it out, the residual heat will continue cooking the garlic.
