I wouldn't say "Nick doesn't have enough self respect". Nick is a very genuine person who makes his own opinions of people based off what he has experienced personally. Logan realizes that keeping good terms with someone like Nick would benefit him, and so it's not surprise that Logan has been nothing but friendly to him. It's politics in a nutshell but in this case the politics are advertised to millions of viewers and anyone else in the world that wants to see.

Okay, honest opinion here (no personal hatred or anything, only focus on the food) 1. Appetizer: Logan won because the scallop with bacon seems more interesting than some tuna with pistachio and pomegranate seeds on top of them. (Sorry Nick) 2. Entrée: Nick won because despite getting weird ingredients, he managed to make pasta in a short time and even though he rushed the pasta making process, the pasta didn’t ruin. His dish looks more interesting than some shrimps sautéed with roasted potatoes. They are quite too simple. Dessert: Nick won because first of all, he was smart enough to choose the dessert that allows you to make it as messy as possible. The pavlova looks nice although the strawberry sauce was ruined, he can solve the quick situation by adding some strawberries and blueberries for decoration instead. He even had a time to make the whip cream when the time almost run out. Sorry Logan, but I don’t think the peach really matches with the flour and vanilla sauce because the peach is a bit sour compared to the vanilla sauce. In summary, Nick 2, Logan 1
