THIS IS MY RECIPE: (OK, this is not exact!) Ingredients: 800g lamb (or anything) 2 large potatoes/butternut squash/up to you 5 small carrots / 2 large carrots 1 large white onion 10 cloves garlic 1 2-inch piece ginger 2 cans (800g) canned tomatoes/tomato sauce/tomato passata 1 tbsp soy sauce 1 tsp vinegar 1 tsp black peppercorn, crushed 2 tsp liver spread/pate 1 tsp tamarind paste 2 tsp harissa spice mix 1 tsp paprika 80ML dark ale Chopped pineapple - to your own preference Salt & pepper 57g rice per person + one finger of water (just kidding) 1. Dice the lamb. Brown in a saucepan just to sear the edges. This is important. 2. Chop onion, garlic and ginger. Not too small. You can saute them if you want. Definitely saute if you will not slow cook 3. Add lamb, onion, garlic and ginger, plus the carrots and potatoes/butternut squash to a slow cooker. If you don't have a slow cooker, you can do this in a regular pan on very low heat, but the result won't be the same. 4. Add the canned tomatoes, soy sauce, vinegar, black peppercorn, liver spread/pate, tamarind paste, harissa, paprika, and dark ale. Stir it all in. Set the slow cooker to LOW and cook for 6-10 hours/overnight. If it's in a regular pan, cook until the lamb is tender. 5. One hour before cooking is finished, add the chopped pineapple. 6. Before serving, add salt and pepper to taste. 7. Cook rice by ignoring instructions on the packet. Modify this recipe how you like, I don't mind! But this is how I do it! Yes, it's not a pure kaldereta, but is there such a thing?

I'm filipino and i came to the United States of America in 1967 at the age of 5 years old,it was very difficult for me to grow up at an early age in the US and not knowing how to speak english.You mentioned in your last video about when you were younger and was mentally abused by other kids as you grew up,well that was the same ordeal i had to endure while growing up in the US.Now i'm 58 years old and have never gone back to the Philippines (Mindanao,Cebu city area) and cannot speak my native language due to growing up here in the US and assimilating to the lifestyle in america. When I get together with other filipino's here,i feel like an outsider wishing that i should have made an effort in my younger days to maintain my native language. On viewing videos of you previously,i was totally impressed with your ability to speak bisayan fluently (at least to me as i hear it),i've got to say that you're more "Filipino" than i will ever be! (That's a compliment). I initially viewed another person's KZbin video (i won't mention the name,but you know who...Lol) where i first saw you on KZbin.You have a way of being in front of a camera and being"Sincere"/genuine about what you say and do while adding humor,that's one of the reasons why i no longer subscribed to that other channel. I've noticed that your subscriber numbers have grown significantly in a short period of time that you have started,congrats! In closing,years ago a friend once told me that every bad thing we experience in life ..."Shall pass" this is in regards to your previous video with your close call. I try to remember those words to carry me on through bad days in my life,i don't know you,but through your videos i feel like a distant friend from a distant location. Please don't ever give up! There's a reason why that wood broke and why you're still here to touch everyone's hearts regularly. I very much look forward to all of your KZbin videos...

Hi, sir! Here’s a good ole’ rice-cooking tip: If you think the rice is still a bit damp (and by damp, I mean, there’s no water BUT a few drops here and there), let your rice sit for a bit with a cover on for about 5-10 minutes, without fire. It’s a trick my grandmother learned from my late great-grandma.

This is the part of KD that we didn’t know about... being a cook at his own kitchen! Please do not hate on people that cooks rice differently, there is no shame on cooking the rice in a different way I mean, I'm a Filipino (sorry for my bad English btw) who cooks rice just like most of people (asian people) say "Correctly", but think about it, as long as you get the job done, there is no mistakes at cooking the rice in a different way, some get very offended because its very different from what they used to see or what they where used to do but I see nothing wrong with straining the rice after it cooked, some of us Asians who really understand especially cooking different types of rice do not laugh at people who does it, we respect them.

Basmati rice is cooked in a different way. The instruction on the packaging was correct.

Not really, I've been cooking basmati rice here in Saudi Arabia for years now. You can cook it the South Asian way but you can also cook it the Filipino way and it will still look and taste fine! The grains will still be fluffy and loose when cooked. I actually prefer it to the Philippine variety whose grains stick and clump together when cooked.

Same here in my location. I used basmati rice but i cook it the Filipino way... as in the real Filipino way, no need for measuring cups... only measuring finger. 😅😅😅

@@hjmchannel897 There is no right or wrong in cooking the basmati rice as long as it turns out fine when cooked. The instruction is the traditional or South Asian way like how they do it in India, Pakistan, Bangladesh,etc. At the end of the day, it is still rice and you may cook it whatever way you want - Indian, Arabic, Chinese, Brazilian, Filipino, Thai, Japanese and what have you!

Carry on Kumander. So heart warming to see that strong bond you have with your folks. I cant wait for them to try a more exotic dish like dinuguan. Maybe in better days, they ll be interested in visiting the Philippines.
