Did you know you can make bologna at home. It is sooooo much better than commercial bologna. Just takes a few ingredients, and you can use any meat you want, as long as you have enough fat added. Kind of messy, but worth it.

Nice video and recipe. It is to die for. A little tip for you all, use heavy aluminum foil and wrap your loaf in it at least 3-4 layers. Then start squeezing from the ends to make a perfectly round loaf. You can squeeze quite hard and apply a tremendous pressure. I use this technique with sausages and also making custom steaks with various meats and meat glue.

I rolled mine in parchment paper and it worked great. The fat cooked off and it held together better.

Yes, they shrunk as they cooked. It was so good and I am hoping to make more soon for my granddaughters. They love it too!

I didn't know anybody else did this. I love making our own bologna. Rick won't eat the store bought kind,but loves the homemade. Couldn't get the video to play.

Yay! I am trying this. Now to find a recipe for Oscar Meyer braunschweiger. I've seen a few on blogs but still looking. In the meantime, I can make olive loaf or whatever I want.

Oh, that you for your kind words. My next video should be scrapple, then homemade hominy, cinnamon rolls, crescent rolls, and who knows what else. I usually plan out a month. I hope you find them helpful.

Whatever you do, never give out your address!! You'll have a line a block long of folks just dropping by - your recipes look delicious - and I never realized you could make your own bologna. Loved the way it disappeared with Athena!!

If you contain the meat in a casing I believe you can boil the meat until it hits 150 degrees .It would be more like professional made bologna

You can use the loaf pans. Turn them upside down on a broiler rack. Just a thought.

As the fat cooks out, the meat lets go and falls down, coming apart and makes a mess. It works the way I do it.

Interesting. All the years I worked in a grocery store, and I have never heard of Tender quick. Morton Salt is quite common where I live too. Thanks for sharing.

It may not be in all stores, of course. It is in stores in farming communities, though. If you can't find it, Amazon has it.

Debbie's Back Porch. Lebanon Bologna can be ordered online, but it is expensive. The reason that I asked you is that I Googled a recipe for it. The ingredients are different from your bologna. The recipe calls for it to be smoked. I am sure that with some figuring that it also could be prepared like your recipe. I haven't ever ate Lebanon Bologna, but from the ingredients it sounds good, which yours does also. Our granddaughter, Elizabeth, loves bologna, your Athena reminds us of our granddaughter, she is 7. We'll have to make her and us, I love it too, some homemade bologna, she'll and we'll love that treat.

I think it depends on your taste. Some fat in the meat make it easier to emulsify the mixture.

The water is what makes the texture. I don't know how laving out any of the other ingredients.

If I were making this using the smoker method, what temperature should I use and how long should I cook it? On another note, I try to restrict my salt intake, so could I use something other than the Morton's Tender Quick? I've had low salt bologna, and enjoy the "meatier" taste. Also, for the meat mixture, I would probably use "meatloaf mix"; it's pre-mixed at the store, and is 1/3 beef, 1/3 pork, and 1/3 veal. Thanks for a great video.

Considering the meat is lean and has fat. Would it help if we froze to small cubes the mixture of water and liquid smoke then add to the grinder?

I am not sure, Steve. I haven't tried that. You want the processor to emulsify the meat with the spices. If you try it, let me know how it turns out.

Inspiring, we just got back from a trip to cousins farm and have a whole carcass of pork (40 kg) and 20 kg of lamb. I am going to add some venison and beef. I can’t get the Morton’s mix as it is $107 for a bag. Can you tell me the ingredients please. Thank you for another delicious recipe

Tender Quick is $10 for 2 pounds on Amazon. It is cheaper than that in the farm stores around here, but I don't know where you are located. I pulled this off the web. Morton® Tender Quick® mix contains salt, the main preserving agent; sugar, both sodium nitrate and sodium nitrite, curing agents that also contribute to development of color and flavor; and propylene glycol to keep the mixture uniform. Morton® Tender Quick® mix can be used interchangeably with Morton® Sugar Cure® (Plain) mix. It is NOT a meat tenderizer.

I did some research and you can find substitutes made from curing salt, sugar and pickling salt, but I have never tried it so I can't give you any feed back on them. I know that plain curing salt cannot be used alone as it can be toxic in the wrong proportions.

Debbie..what part of the pork r you using. I bought a pork butt, but it has so many of those white strips in it, it clogs up my meat grinder. My hubby suggested pork chops.

In many things, salt is a preservative. If you are on a sodium restricted diet, there are just some things you won't be able to have. That is how I am with potatoes. I want them really badly, but just cannot have them. Sorry.

According to USDA, as long as it stays at refrigerator temperature, it can safely be refrozen, although the quality may suffer. Check foodsafety.com.

No, and I don't even HAVE a back porch. This is the name of my Facebook group that I started the channel for. In old Southern farms, the front porch was for visiting, the back porch was for working. The back porch was where my grandmother and mother taught me how to do things when I was a child. In the hot Georgia summers, before air conditioning, the house was too hot. You pretty much lived on the porch. So I took that name to indicate our group was a learning place.

I wrap mine in plastic wrap and then twist it until it becomes a nice firm roll. The next morning I will remove the plastic wrap and place it on banking paper and roll it up and then again twist the paper to secure the rolls. I then cover it in foil. Poke some holes in the bottom. It does not have the lovely brown colour which yours have, but if you are as nuts as me then everything must look as perfect as I can do it being as imperfect as I am.

People often say that to me. Our accents are quite different, but we are from the same state. If you are not familiar with Georgia accents, you probably wouldn't pick up on the differences.

Your recipe reads garlic powder and you are saying garlic powder but holding garlic spread. Which is it or does it matter? I like your presentation and at some time I will likely make this but I will use one of those meat loaf pans that holds the meat of the grease. It will create a better looking finished product and be roughly the same shape as piece of bread ie square. Not knowing how much meat it would take to fill it, I am going to take a pound roll of sausage, or two (still in wrap) and place it in the pan and try to gauge from that how is necessary. Well, I can now save someone some trouble. The meat loaf pan holds more than two pounds, nearly three. I am going to use two and one half pounds since I am adding the other ingredients. Also, it is going to end up about half the width of a piece of loaf bread but then you can use two slices and cover it completely. Thanx

I made these with a 5# cub of hamburger. turned them into 4 portions that I cooked for four hours 200F and one hour at 300 They came out really well (bit salty, but more than tolerable) Ate one in a hamburger bun while it was still hot last night and had two in hamburger buns for breakfast this morning. Yuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuummmmmmmmmmmmmmmmmmmmmmmmmm Thanks
