If you're ever think about painting the entire Smoker, Use 500-1000 degree engine paint. It last along time, looks great on the Smoker and Trailer, Also , keeps the Heat on the inside and you're not your heat..

Mr. Yoder thank you for these videos. I visited Eric at Datstack Smokers last week. Really cool guys and took the time to explain his smoker builds to me. I love and I mean love Texas Brisket. I am a beginner at smoking brisket and it is an art. But I will keep watch your videos and work on my smoking skills. I am a California native and if I cannot go to Texas. I will make a little Texas here for me. I am definitely working on getting a fatstack for my back yard. If you are going to do it. Do it right. I am probably going to go with an 80 gallon. I mean it is for my backyard. Lol. But thanks Mr Yoder and thank you Eric at Datstack for being so cool and educating me on your smokers Things are beasts.

Very cool smoker, and I like the fact you just use the door on the firebox for air intake. Also on your smaller smoker (I own a Lang 36) I make a REALLY big fire and knock it down to get a nice bed of coals. Then feed it VERY small splits so that I always have a clean, but small fire going. That way I don't have to almost start from scratch when I add another small split.

Other than the obvious size difference? I built my 500 gallon very similar. Firebox is 3’x3’x3’ 1/4” and 4” double barrel stacks I welded together just like a shotgun. Propane tank costed me $70 and I traded an old toolbox for an 18’ boat trailer I found at a scrapyard. Whole thing might have cost $700 for me to build. I used a few links of chain for my door stops. Welded one end to the inside of the cooker and the other end to the inside of the door to keep the top exterior nice and smooth. And the wholes that we’re originally on top to fill the propane? Those make excellent for drainage since they are now on the bottom.

Hopefully this tank was really made from a propane tank. There's been a lot of pits being built from scrapped oil field vessels. What they don't know/realize is that depending on what material the vessel had in it, some oil field metal has "NORM" natural occurring radioactive material. That's why when you take oilfield metal to the scrap yard, they check it with "NORM" detectors. If it's a propane tank, then your good. Nice pit!!!

I’m pretty sure that the fire box is insulated with fire resistant insulation. Way two thick to be just a 250 gal fire box 250 gal tank is 3/8” thick. Nice pitt

I need help, how do I get this reverse flow smoker to heat up my main pit cambers? It’s a 250gal propane tank with Fire box 30X20X20.. I have no problem getting the smoke but no heat higher then 150 degrees. If you need pictures I can send direct location to receive them

There was a guy in San Antonio that wanted $250 for a 1000gal propane tank. But somebody beat me to it, I was really excited to making it into a smoker, but it just wasn't meant to be. But he also had a 250 gallon propane tank, so I went ahead and took that one for about 50 bucks. Now I am designing my own smoker, so not bad right for 50 bucks? I also got a guy that's gonna do the labor for about 600 bucks, just gotta buy the material which is gonna be about another 400, and I also bought a trailer for about 400 bucks. So, in total, I'm really gonna save a lot of money in the end

that grill grate brush with the fine wires is dangerous!! multiple people have had the thin wires break off, get into the meat and then end up stuck in person's gut... problem being the metal is so small and nearly impossible to find from surgery even when they can see it on an xray. -- causes all kind of problems for months leading up to a person needing surgery for it as well. run away from any metal brushes for the grill. just not worth the risk in my opinion.

It's a really nice smoker but those doors are ridiculous. They should have a counter balance mechanism on them.........this system is nice but very under engineered. But the toy guns on the front are cute...so are the horse shoes. Wow.......! Now it's time to finish building and making it a real smoker.

You'd be surprised how many propane tanks have been made into smokers. Yes the LPG soaks into the metal, that's why alot of builders fill the tank with liquid soap and water before cutting into. It keeps it from exploding. Then once your done with the build it's time for a burnout/seasoning. Build a hot fire in the smoke chamber to burn any oils and residue in the metal.

Aaron Franklin doesn't do it for one thing. Secondly, it'll take a shit load of paint and a lot of work to keep it up. Not worth it.

But Franklin's pits are all inside so rust really isn't an issue. Look at Shirley Fabrication's pits about mill scale, sand blasting and painting. If you sand blast the mill scale off then there isn't much up keep to it.

Sand blasting in So Cal is cheap. There are tons of places to get it done and 1000gal tank would probably be about $250. Shirley may use new materials but they sand blast every pit before painting and that's what keeps them from peeling.

Well I do onsite catering and cooking on site. My clientele are that of such means if I were to show up at a private golf club with a smoker/trailer that was a rust bucket I would get run off. For me and my operation looking the part is as important if not more important than the food. I have a really nice website, my crew and I are dressed for the part and having my rig clean and nicely painted is of the utmost importance. My service is not cheap, that said if my clients are paying top dollar I should at least look as good as the food that comes off my cooker.
