Step 1. Use the right equipment. You need a high, even heat and a thick metal. Step 2. Don't way too long to flip the pancake. Each side should be cooked approximately 55% (first side) and 45% (second side). You have here cooked the pancake entirely on its first side. By 3:30 its dried out. And then youre just browning the other side for a bit. @1:40 you can see the edges of the pancake are starting to take on a shiny jelly-like appearance. But then from then on the colour starts to fade and the top of the pancake is losing its shine Turn the pancake before it starts to dry out and observe the colour of the bottom side of the cake. Is it too light (a light golden brown is too light) or too dark (dark brown like well done toast), then the heat source for the hotplate needs to be adjusted. Step 3. Leave to cook on second side until colour on both sides match. But it is acceptable for second side to be tad lighter than first side. Make a crack in the bottom of the pancake, using a spatula or other implemenet, and observe whether or not theyre is still wet mixture inside. Should take about 2 minutes tops to cook a pancake.

If you end up disappointed with a "Just add Water" box of pancake mix because your pancakes end up raw in the center, no matter how long you leave it on the stove, I have a couple of tips that fixed that. I tried so many tips such as flipping only once, letting the batter rest, using oil instead of butter to cook it on the pan, and they still were raw in the center. But this time I added a little bit of baking powder (the box said it had some baking soda, but maybe not enough) and an egg to my mix. I didn't over mix the batter, I let it rest a little before cooking them, and my pancakes turned out fine! I guess some mixes just need little adjustments.

Your pancakes look lovely. I followed the directions for Aunt Jemima's formula, with what was in the box but milk instead of water & an egg because I wanted a thicker pancaked. I added 2 peached diced up. Then I cooked them on low for less than a minute & they burned. I would leave photos here if I could. I hate throwing out food and these taste awful.
