No dessert inspires more childlike wonder and glee than a Buche De Noel- the fabulous french Yule Log Cake. It really looks like some magical fairy turned a log from the forest into a big chocolate cake.
A lot of people don’t realize that there are many kinds of buttercream icing, including swiss buttercream, which incorporates italian style meringue with butter to make a light and rich frosting.
Today we’re making this chocolate yule log with candy meringue mushrooms and caramel moss, which although this looks like a hot complicated mess, it’s quite easy to make once you know how to put it together. And even if you mess it up, you can still impress everyone by saying it was a more natural style.
Joining us to shove this yummy log into our pie hole is everyone's favorite Russian mail order bride, Katya Zamolodchikova.

I met Katya because she is a friend of a friend from Boston. UMass Boston was doing a drag show and we had lined up (believe it or not) JUJUBEE! and the coordinator of the GLBT student union did a runner and jujubee had to do another show that night. so, i called my friend and he and 3 friends including Katya came to do the show last minute! it was a wonderful thing!

I agree I LOVED that it was like a full length show. I REAAALLLY enjoyed watching that. I'm a mushroom fanatic, I make felted mushrooms, crocheted mushrooms & fabric mushrooms 🍄🍄🍄 Since I was little I was obsessed with fairies & mushrooms. I think you guys did a stunning job at those meringue shrooms!!! I'll definitely remember to how to make those! They looked so real, & quite easy. Thanks heaps, I wish I discovered this much sooner. CrazyBeebsxx For the moss, organic cane sugar or unrefined sugar. For the cake mix, a vegan fudge brownie recipe, For the frosting, there's vegan frosting, but I'd prefer to make my own. The part where I'd be stumped is the meringue mushrooms, but I would try out using chickpea brine from a can to sub for eggs. Supposedly, people using chickpea brine to make a vegan meringue have had success.
