If you put the sandwich together on the board first, you can put cheese butter on the top side, then flip it over to go butter side down into the pan.... then spread cheese butter on the naked top bread side while it's in the pan, flip it over when the first side is cooked. Hey presto, 2 sides have delicious cheesy crust 😊 (obviously with the egg version you can't assemble it on the board first)
