I made this recipe and can tell you all, just make it! I cooked for four guys and myself and they were pretty darn enthusiastic about this dish! Everything was flavored nicely and the presentation of that burrito baby with sauce and cheese running down the sides was very enticing! This is not a quick recipe to make, it is a few hours of work but worth it. You're preparing the Spanish rice, the refried beans, the enchilada sauce, the beef so lots of prep work and dishes cooking at once. This is my first time trying a recipe from Claudia and she nailed this one! One of the guests commented that it was restaurant quality. Thank you for sharing such a delish recipe. I can't wait to see what else you have and continue to post on your channel. I will be watching!
