Love this recipe! My grandmother always boiled the eggplant, but cooking them in oil with the garlic is much easier and enhances the flavor!

My grandfather used to make these, but as a “patty” and he would make garlic bread using sour dough roll’s. Then he would prepare them like a burger, he would butter both top and bottom of the garlic bread with homemade riccotta, and then top eggplant patties,with marinara sauce, fresh mutz, fresh basil and broil in the oven for a few minutes. Boy do I miss my baba…

Why must you people constantly weigh in with what your mother or grandmother did, who cares? I'm a professional Chef. I come from an Italian American family and I like a lot of the food my grandmother made, but most of the time there's a better way to make it. BTW: sourdough has no business being in anything Italian. This is a recipe for eggplant meatballs. Thats it. And it's MOZZarella, not MUTZ.

Hey Joe! Looks so good! I'll have to make them. All 4 of my grandparents came from Italy at the last turn of the century (1903 to 1905). Naples (my father's parents), Abruzzi and Foggia (my mother's parents). I may serve the meatballs on the side with some spaghetti, garlic &oil. 😋 Also, love the music you listen to. I am a 57 year old, former NYC cabaret singer... huge Judy, Frank, Dean, Bobby and Tony fan. Always incorporated them into my shows! Love my standards! Good music...good food, family/friends...who could ask for anything more!?!😁🎤🎶👍

Joe. Seems a bit soft. Wouldn’t you want to drain the eggplant to get sone of liquid out?
