7:50 in Italy they also use toasted breadcrumbs for cheese replacement in the past, especially in poor town where the cheese was an expensive commodity, it called a poor man’s cheese

Thanks James, the weather is a bit better this week and the nights with Max calmer. There are a lot of changes and children do not seem to be very flexible ;) As for holiday you will be jealous. I am going to Bavaria and I will be drinking beer and eating Zwiebelrostbraten 2 weeks long:)

I made the potato dumplings tonight with my homegrown Yukon gold potatoes and potato starch, Man they were the best I ever had! Dumplings, schnitzel, and pickled beets, what a good meal it was. I finally found the potato starch and it's way better than corn starch. Tomorrow they’ll be fried in butter, it just keeps getting better.

Morning Marta, that was interesting, I didn't know there were different ways. I use only cooked potato's. I use the whole egg not just the yolks because that's how my mother made them, no nutmeg just salt, pepper and lots of butter. My mum always said you had to use plain flour not self raising.

Aaaaaa thats interesting. I need to have a look for this kind of potato dumplings!

Yes Marta, fried leftover Knödel & Klöße are my favorite too. Btw, if you cut your Klöß with a knife or a fork, you'll get less sauce to stick to them. Always tear a dumpling.

Hi Marta-We just came back from Germany. My girlfriend was invited to speak at a conference in Jena at the university. We had nice Thuringer dumplings at a restaurant called Rote Hirsch. We drove back to Frankfurt and on the way visited Buchenwald Memorial. Then we needed something light and amusing after such a serious morning so we went to the dumpling museum (Kloßemuseum) also near Weimar. That was fun. Thanks for all your videos. It helped prepare us for our trip as we also went to Frankfurt, Stuttgart, Leipzig and Prague and ate according to your recommendations! Best wishes and thanks!

This modern method of ricing potatoes is interesting but to my taste it just makes a slushy mess. The French oddly seem to like this slurry. I boil my potatoes in salted water and then mash them by hand with butter and milk and of course seasoning It needs to have a firm texture and not be slop or bouncy like a tennis ball. I suppose it’s a matter of what you are used to.
