This was the first recipe I've ever tried making from chef and Francis 8 years ago. I'm still not a good cook but even today I remember how tasty it was. Miss you Francis and thank you for still posting videos chef - hope you are safe and well.

I just made this for lunch, and it's amazing! I already liked making carrot kinpira, but this recipe is even more delicious. I added a very small amount of crushed red pepper to give it a hint of spiciness. Arigatou gozaimasu, Chef-san!

You can use gobo (burdock root) but Chef recommends to shred it thinner than the carrot and use a little. She thinks this recipe brings out the sweetness of the carrot so that the carrot should be the main ingredient :)

I tried this dish and loved it. The carrot was so sweet and the tiny amounts of salt and soy sauce did not overpower that sweetness. I did not add tuna or chicken because I was using this as a side dish, but I will add it in the future when I want a light and yummy lunch. Thanks so much for sharing this!

I just made this and I am eating it right now! It's very good. I didn't have bonito flakes so I used fish sauce, and it is very good, with the saltiness of the fish against the sweetness of the carrots. The egg and fish provide the protein that balances everything out perfectly.

My mom used to make this for me all the time! We're Okinawan, yet I never knew it was an Okinawan dish! When she made it, we didn't use the bonito flakes, now I make it for my daughters and they love it.

I made something similar some time ago. Cut carrot in thin strips, lightly stirfried them in the oil of the tuna, added a bit of water to cook them, some sugar. then I added tuna and a little pepper and salt and finally the egg. it tasted really good with a breadroll and some mayo. hehe. I can't wait for you next video, Francis and Chef, keep it up!

For my mom, who hates fish "it's only a bit of seasoning" but for everyone else it's thinly shaved dried salted tuna. It's very yummy and looks really fun on top of hot foods as it kind of "dances" in the heat.

Shirishiri-ki is not a popular kitchen tool so it is very difficult to get it if you are not in Japan. Please substitute a regular grater for shirishiri-ki.

Bonito is a kind of ocean fish. The flakes are made from the meat of the fish once it is smoked and dried and it adds a smokey, fishy umami flavor to dishes. You can find them in asian markets, many health food stores and in the asian section of most supermarkets. You can always order them online too! Because the flakes are so light when the steam is escaping from the dish it kinda makes them wiggle and move making them look like a living thing.

Bonito is skipjack tuna, which is typically dried and fermented then shaved into very thin flakes that are steeped in water with other ingredients to make dashi stock. Also, it's used as a topping for some types of dishes.

Add a sprinkle of dashi stock powder if you can't use the tuna :) It will bring up the flavor!

Some people don't use bonito flakes for this recipe. It's totally optional so you can just omit it :)

I like how Chef says she is using a "special" tool to grate the carrots, because here in America a kitchen grate is a very common household kitchen tool. You can find one at most stores and they are very inexpensive. It's just my observation on the differences in cultures and love learning "facts" like that.

The amount of water depends on how high the burner is set but Chef usually add about 3 tbsp of water to cook the carrot quickly :)

For those who didn't get what Francis said at the very end about meat substitution, he said: "You can substitute tube-like chikuwa fish cake for the canned tuna." Google chikuwa if you don't know what it is. I love it and always have some in the freezer for my ramen and stir-fry.
