If you use a 9" pie pan as your drip/water pan you can lift the whole vortex out, bird and all. It sets down in there and holds firm.

Relatively new to your stuff, Ry, so have been browsing the older stuff here and there. Just stumbled onto this one and it looks delicious -- a great solution to the classic crispy chicken skin problem. Just ordered myself a Vortex! Looking forward to playing with it.

For the “beer can” idea to work well it’s best to place your can setup on the cooker with the liquid in it and pre- heat the setup until it’s grill temperature. Use cotton glove liners covered with latex gloves to place your bird on the can setup. Plug the neck cavity with a veggie so steam cannot escape. It’s more of a hassle to be sure. I used to do them quite often but lately I find that just liquid brining the birds will impart all the flavor & moisture for my tastes. Thanks for the video.

Share with me a good liquid brine. I’m stuck with the salt, sugar, water one (very SIMPLE and great wet brine btw. Keeps chicken, fish, steak,pork moist when cooking. Even when I burnt chicken on my new grill the inside were still moist)

I use a small canning jar that fits in the center of the rack that holds up the chicken. I use juice or wine or beer. Works great.

Fantastic video and thanks from over the pond in England. I love beer can chicken and have tried many different liquids in the can, including, different beers, ciders and wines with added herbs and spices sometimes. I definitely think the contents of 'the can' imparts different flavours. One thing for certain though, the chicken is always moist. I will definitely be trying your vortex method next though.

Revisiting this great video all these years later and having done beer can chicken several times I'm not sure that my palette is sifistocated enough to taste much of a difference. I'm definitely going to try to get me some chipotle powder and give it a try with the inverted cone. Perhaps it might be a good idea to re-do a newer version for folks who are relatively new to your channel Ry? In any event, as Thanksgiving approaches I give thanks for the inspiration and for all that you do. Kindest regards from Ireland. 🇮🇪 🇺🇸

Man, when you tasted the piece with the skin on you could hear that crunch, sounded perfect. I'm definitely going to be giving this recipe a try very very soon. Great channel Ry, really appreciate your videos, some really inspiring cooks you're doing here.

Thinking bout hanging some ribs on the WSM using the meat expansion rack. Turns it into a PBC sort of.

If you use a charcoal chimney lighter you can fill it with your old coals and then when they're going good use them to light your new charcoal and then you won't have the problem of them not getting nice and hot. Use your torch to light the chimney full of old coals and then you still get to play with the torch.

I tried this with the vortex and the top was done well before the bottom part of the chicken. The breast was at 170+ and the thighs were at 150ish.

I've had similar issues. I've followed the instructions that say to cut off air flow below the chicken with foil. Wonder if that is a factor? I want the chicken falling off the bone.

I had the same thing happen. The skin got much darker on the top. Next time I'm going to foil the top, and remove the foil at the end of the cook.

Great video! Couldn't help it, I had to subscribe! I'm following your instructions for my next BCChick, this time using my newly purchased Vortex. I had good results injecting some chicken broth and painting lightly with Buffalo Wings sauce or Korean Sticky. So many chickens and so little time!

I'm doing this right now for the first time with an amazon vortex ring. Just checked it with a thermo and the skin was super crispy as it went through! I lost my chicken stand so I just laid it on some tin foil.

Hey Ryan. Love your videos. I want to give this method a try with my vortex. Just one question. Instead of using the torch to light the coals like you did, will it work with starter cubes? Or should I just light the coals in my chimney and pour it around?

Great video and I have a few questions: Does the Vortex get hotter than the Weber Crates provided with the Weber Premium (therefore is it worth it to get or can i get the same effect using the crates? 2nd question - have you tried this method with the Vortex with a turkey? How did it come out?

I've never had an issue using the regular grates with the Vortex, and as for Turkey, I haven't, but they should get similar results since I've done both legs and thighs using the regular baskets :)

If I didn't say in the video I didn't track that since chicken depends on internal temperature to tell when it's done.

I have the 22" and I believe it's the medium for that size, but check that to make sure before you purchase :)

It depends on the temp I’m shooting for. If it’s just ‘hot’ then I usually leave them wide open.

Generally 165 in the breast meat, and about 175ish in the thighs.

Made a lot of sense… other beer can chicken is just a waste of good beer… meaning none of the beer even evaporated out to keep the chicken moist… noticed none of them showed how much beer was used or left in the can..
