Belizean Cassava Cake

Well finally, here it is for you guys. This is my very highly requested Cassava Cake recipe. Cassava cake has always been one of my favorites ever since I was a little girl. I hope you give this recipe a try. Enjoy!

👩🏻‍🍳 BELIZEAN CASSAVA CAKE
2 lbs. peeled cassava (2 ½ lbs. unpeeled)
2 cans (13.5 oz each) coconut milk
2 ¼ cups brown sugar
4 tablespoons margarine
2 teaspoons vanilla
2 teaspoons nutmeg
Bake at 350 F or 177 C for 1 hour and 45 minutes.

Hi we in Trinidad call it Cassava Pone and we add pumpkin and raisins to it and we also call margarine butter lol. It's so nice to see that there are so many similarities in the different parts of the world.

Hello Shirani. I wandered aimlessly through KZbin looking for a unique but reasonably simple dessert recipe that I -- a motivated but inexperienced cook -- can do. Somehow, I found your video. Thank you for your wonderful recipe and especially the blender idea; I will definitely try this method. Secondly, having lost my mother 9 months ago, your gentle recollection of your mother as you flipped through the precious cookbook that she made for you brought me gushes of tears and joy to my heart. Thanks for sharing in guyana we call it cassava pone and we grate the coconut and mix it in with essence , spices margarine and a little blackpepper
