Hi Jack As a teenager I used to help out my dad at the Italian Resturant he worked at I was the dishwasher and cleaned a 20 kg box of prawns every day. My two uncles were Cooks their too. I loved every minute of the long hours and picked up a few recipes by watching them . It was a long time ago but watching you brings me back to those happy times. Yep, use everything! I’m killing off my corned beef making fresh real hash tonight! An old railroad chef told me how to do it, he was an amazing guy, truly loved being in the kitchen! You're right Jack you can't waste especially now. I find myself repurposing things, making leftovers into something new, like a turkey breast I had, got all the meat left and made a layered casserole, had no gravy but did have a Swedish meatball sauce mix, used that and it was tasty. Had tomato sauce when I needed paste and vice versa, so subbed them for each other. Had no pasta so used rice. Bought dried mushrooms and canned since I dont go to the store that often anymore and mushrooms don't stay fresh long. It's adapting to what you have, what our grandparents did all their lives. What I bet you do in your restaurant too. I love how you cook. Stay well.

I like Jack's method of handling pasta if finishing it in batches for people. Cook 75% of the way in plain water, let cool on a sheet tray, save the starchy pasta water for re-boiling later or keep it rolling if it won't be too long, finish cooking pasta for 1-2 minutes, then toss into sauce to get all the salt and oil/butter it needs, plus it gains that starchy pasta water to help tighten and smooth out the sauce. RIP Jack.
