You gotta appreciate the rags hanging off the stove doors, the sheet pans covering the Bain, and the burners on full blast at all times, and how Tommy always just appears in the background at some point. Love it though. I'd love to be next to you on the line Jack.

Today was the first time since he died I have watched one of his videos. I had a hard time watching I really enjoyed watching him and he even responded to me directly a few times. He was one of a kind.

I love watching Jack. Best chef on KZbin by a long way. He’s real and genuine and makes things that anyone would love to make and eat at home. Not some glammed up pretentious celeb chef that nobody can relate to. Keep up the great work Daddy Jack.

You are the first person I have ever seen besides my mother who doesn't fry their meatballs. This is exactly how she made them, cooking them in the hot sauce. They are the best ever! Just awesome!

Agree with the way you put the meatballs directly in the gravy! Hung out with a friend as a youngster and his Sicilian grandma did it that way but added raisins.

I have been watching Jack cook for a few months now and all I can say is "DANG". If I lived within 50 miles of his restaurant I would make a weekly trip. This guy is a fantastic chef. I will definitely be trying his recipes. All I can say is DANG! in the best possible way. Kudos to chef Jack.

Such a great cook jack and looks like an absolute gentleman the way he welcomes his guest to try a dish he’s just made. Love what food does for people, it’s the glue to all the party’s and entertainment that we do. Love watching and hope to see lots more of the great food.

I make my meatballs similar but I don't use a food processer and I add mint and grated romano cheese. It's my Sicilian Grandmother's recipe from the old country. It comes out fantastic!

... a trick I was taught while I worked, by a greek chef, in a restaurant ... use a "ice cream scooper do make all the meatball the same size. I like to do the same, cook the meatballs in the sauce ( that makes it "red gravy" !!!) in small batches ... but if you are planning to serve/plate a lot of people, then you have to "fry" the meatballs. Save the 'drippin's" and add that to the sauce too.

You can absolutely fry the meatballs before putting them in sauce. Just a quick browning of the outside to give them a nice crust. You don’t want to cook them thru. Let sauce do that. You then pour off most of the oil then deglaze pan with white wine. Pour this into sauce. These 2 tips will significantly elevate your dish.

I broke down and made these exactly like you said. It was a hit with everyone. I did hold a few back and browned them in a bit of bacon grease in a nonstick pan. I had a bit left over so, me being me, I had to try something. It's already a bit wet so I added some duck breast. Its duck season here so I had plenty. I chilled the duck and ground it. I ground it with a little bacon. I added it to my leftover mixture and did the same thing. I put some in the sauce and I browned off some and finished in the oven. I made myself a meatball sandwich with the duck balls. OMG.

I thought processing the meatballs like that would make them "mealy" but they appeared tender. Never thought of poaching em in tomato sauce. I think I've had sausage done like this, like you mentioned, which were extremely tender. I think this may be how they did them. Gotta try this recipe!

I used to make a special trip out your way, being a Carpenter, to buy tools at Coastal Tool on Bank St. !!!!Are they still there ? What a great place to buy tools in the day ! When things where good and construction was booming !!! But they didn't sell Meatballs !!! Lol !!! TY Big Guy !!! Thats one hell of a Meatball !!!! 😁🖒✌🕇💕

You don't have to fry them but if you brown them a couple minutes before putting them in the sauce it would give them a little more personality.

His daughters say that he was the "soul" of the restaurant and when you watch just one video you can see what they mean. This man had an old world hospitality that has almost disappeared from the industry. You can tell he loves what he does and he loves who he does it for. I am happy that such a rare thing was captured and shared. One of my greatest disappointments was not being able to visit his restaurants. I wear the apron, I use the seasonings and I even have the bumper sticker on my fridge, R.I.P. and god bless 👍✌

Jack you are killing me fellow chef , I am missing my home state{ RI-Conn-Mass} restaurants so much , great looking meatballs , never knew can just raw poach like that , but again it still hits the temp of 160 etc so seems safe and much nicer to do .. I miss scungilli the most :)

Most recipes call for browning the meatballs, but I knew I really likes soft ones, and poaching would give me that, so thanks for recipe, and confirming that for me.
