Brown sugar and/or honey will balance out the soy sauce. I know she said use “equal amounts” but I would cut back on the soy sauce to lessen the salt.

For sake, you can substitute 1 part rice vinegar to 3 parts water. Don't use rice vinegar as a sub to mirin as mirin is sweet and rice vinegar is not. You can sub white sugar for mirin.

I made it. Thought it tastes too salty to me. So much soy sauce! Next time I think I might add sugar to balance out the soy sauce. I don’t think the mirin has enough sugar content to balance out the soy sauce

Sake is a rice wine, even though it's rather brewed like beer than fermented like wine from grapes. It's an absolute necessity in Teriyaki. The alcohol will evaporate during cooking, so no worries about that.
