Tried the oven baked version and it's super good! I was kind of skeptical (a lot of unfamiliar elements here haha) but it turned out really well, and I'm so glad to have learned that eating vegan doesn't mean you have to give up comfort foods like oven roasts :) thank you sarahhhhh :D

i feel so ready to transition 😌i lovee to cook with spices and everything you make looks so yummy!!! im even inspired to workout....i have a horrible relationship with food myself, in another aspect. i do not eat much with depression and for the past 3 or 4 years i have been truly mal nourished and very thin...you prove to me like no one else that eating can be joyous and ive started to enjoy eating again! even if i get sad. im totally less sad with a full tummy 👌 thank you so much for sharing your recipes, taste tests, personal story etc......one of the most inspiring people i could think of. i hope you had an awesome saturday

I made this last weekend and it was fantastic. My wife and I gobbled it up in a few days as snacks and sandwiches. Incidentally, I put mine in my Instant Pot on the steam setting for 35 minutes and really enjoyed the density, which I thought was very similar to summer sausage. I've made seitan ribs and chicken breasts in the oven before and thought the density of those was a little softer with more air pockets, which didn't really taste as good. Planning to bring this to my next party with non-vegan family or friends. Thanks for the recipe.

Awesome idea! When I first stopped eating meat I thought, shit: what about corned beef/cabbage/veggies on paddy's day? It was my favorite. I thought about it and what I really loved, was the combination of the fat (from the beef) and the spice packet and the veggies. I'm going to make my own spice packet and try it with just cabbage, carrots, and potatoes.

Recommend a couple of easy and good site recipes, great for beginners. We are not vegan but love vegan food. I am collecting and trying all the different recipes to compare them. I make the seitan from everydaydishtv.com and vegandad.blogspot.com for ribz, corn beef, turkey roast, and different kinds of sausage. they are easy and good. Our family loves them.

Just a small update, I modified this recipe today to make Easter "lamb". If you're interested I could share the changes with you. It came out almost tasting like gyro meat.

I took out the mustard, allspice, ginger, clove, coriander and onion powder. I added half a small white onion diced, a sprig of rosemary that I took the stem off, two sprigs of fresh mint, and about a tsp of lemon juice to the blended mix. I also used a beef style bullion at double strength. For the optional oil I used olive oil because lamb is a very fatty, and I used to marinate it in olive oil. It was so good. I highly recommend steaming though to get the best texture because the fresh onion leaves it kinda soft.

I love your recipe. Made it last night and made my wife and I some Reuben's... I only have little suggestion, as a whole, the end product is way more reminiscent of pastrami (similar cut but spicier). Thank you tho, it's a great recipe!

I have a question though: You are using Vital Gluten... so I would like to know... if I can't eat bread because of the gluten ... is that Vital Gluten would be the same as the gluten in bread and case havoc in my tummy????? What is your point of view on this???

Sarah, girl you are the bomb-diggety!!! I have been making a vegan reuben for a couple years now, but I always use a veggie burger. It is always my go-to comfort food after a long day of teaching snowboarding or competing. I cannot wait to try this seitan recipe!!! I make seitan in the crockpot using the recipe from my favorite vegan cookbook "Fresh From The Vegan Slowcooker". I will make it this week using your recipe/ingredients and let ya'll know how it turns out!!! Also, I'm trying to shed a few lb's before snowboard nationals in Colorado at the end of this month and have been following your meal prep videos for high protein. Any oven-safe pot or casserole dish with a lid will work! I cooked it at 350 but someone commented saying they always use a crockpot and it works fine.

I always freeze it after it's cooked. It defrosts perfectly whenever you're ready to eat it.

Your recipe states to use 1 1/2 cups broth in the liquid ingredients to puree the beans, so what is the adjustment, if also using the beet juice, how much beet juice and how much broth?. Does it total 1 1/2 cups together?

I used vegan broth cubes, so I just dissolved the cube with the water leftover from boiling beets. So, as long as the total volume of water is 1.5 cups it should work fine.

Yeah the flavors are all there! The texture is different -- since corned beef is quite fatty.

2 cups into the braising liquid. Actually, technically not beet juice -- but the water leftover from boiling my beets. I just dissolved my bouillon cube in that.

Can anybody tell me where to find the vegan beef flavored bouillon? I’ve looked online, but I can only find the non-vegan ones.
If you would have added some garbanzo flour to your VWG ( 2c VWH +3 T flour) and also kneaded it more it would have come out way less spongey. Unless mushy meat was what you were going for?
