Dear Kylie, it's been a strange Christmas for me as I came down with covid after we all thought that was over, and my mother as well, much more worrying as she's been much more affected than I, given her age. My grandson, ie my stepson's baby boy also got the winter stomach flu on his second birthday last week, so we've all been separated for Christmas (most of us) to be careful. To top it off I lost 100% of my ability for taste about a 10 days before Christmas 😱 and my olfactive senses are greatly impaired 😭 Although by no means the professional cook you are, I feel I have very much the same likes and methods I favour, as you do. Probably much due to spending time in France and especially in Italy, and having spent alot of time in a less modern kitchen as a child, my Swedish-Anglophile-Half Jewish Grandmother's . So this year I gave my stocked up goodies away, as when fish and panetone tastes the same and only texture makes them different I felt it pointless, almost painful to eat. The channels I watch of culinary Christmas creativity and festive traditions has therefore meant the world to me this year. Thank you! I know these flavours and scents you're cooking, and it's been interesting to realize how much these things are lodged in part of my brain, that cannot currently connect at all to my actual senses! Strange and also wonderful considering... It's rare I see someone cook great, flavourful, wholesome food using my own prefered methods. The instruments I value most are the pestle and mortar (I have four in different sizes and materials for different uses, the oldest 200 years, small and Swedish in brass for spices handed down in the family, the biggest is a beautifully glazed low fired clay from Provence with a wooden pestle mainly for emulsions, pistou etc, and several in various marbles I use mosy frequently. But I find people these days dont realize the difference in flavour and texture it presents substituting with a blade or processor! This is a big mistake, and I think many miss out on the creamy umaminess the mortar lends especially when pounding garlic, onions etc instead of chopping it), which is amost tragic. My mortars and pestles, my immersion mixer and fine seive, my bamboo three tiered steamer, my cast iron and copper skillets, all important wooden utensils, grater, wisk, chefs knife and olive pitter are the things I use and value the most. Like you I like to get my hands *in* there. I like a gas burner (rather than induction) and like to allow the processes to take their time. Whilst my son and his buddies are all about the sous vide these days, I still use the gasmark 1 or 2 for slow winecooked poultry or lamb, or the cast iron pot in a low oven. I know how fun it truly is to cook up a storm for 30 people! I expect its a little like runners planning and running a half marathon, it's a certain exalted pace and breath, and intense joy! It's been some years since I did that, but oh the fun it was! Exhausting, but really a feast of the senses and a sensation of being a creator of a true experience whilst having an exclusive one in the privacy of the making! Your cooking reminds me so much of why I love food, the sensuous experience it brings to everyday life and memories it etches in our minds for life, important even when faced with loss of senses as I am now. Hopefully this will pass soon. ( The idea of it going on for 6 months like some report, seems unbearable.) I hope quite selfishly to see a bit of footage from your trip to the alpes and feast with your friends! Mostly I just want to thank you for sharing everything you do. I understand just how much hard work goes into filming and editing your videos, and I really appreciate it. This year especially as you've had so much overwhelming experienced to deal with! We had a cat that adopted us and she ended up staying for many years and even moving to a new house with us. She became my son's cat and she would follow him around like a dog when he was outside. She would even get on the sled in the winter and go down hills with us.

I loved what you said about being alone and still treating yourself special. I have always done that! I remember one Thanksgiving and roasting a whole turkey, stuffing the works and opening a good bottle of wine all for myself. I do live alone, but every holiday I decorate and make it it all cozy with lots of twinkling lights that I turn on each night of the season. I also buy myself birthday presents and Christmas presents. Each of us needs to treat ourselves well. I, too, love to bake, and I love giving my italian specialties to my friends and neighbors, those that would truly appreciate the thought of someone caring. There are lots of lonely people. Nothing like a warming homemade chicken soup. I like to make chicken n’ dumplings- something my grandma would make. ❤ Today, I accidentally made a soup that reminded me of your tortellini in bone broth you made a while back. I had a chicken carcass to use up, so I started a stock over the stove. My husband then decided he wanted a tortellini soup. Used to being busy, I was going to run to the store to pick up the week’s groceries along with pre-made tortellini. He wanted meat and cheese filling of some sort. But in the afternoon, everyone passed out for a long nap. My 3 year old son and my dog on the couch, my husband upstairs as he is adjusting to a new 3rd shift job. Not wanting to wake up or move anybody (my son was getting over being sick - I will NOT disturb his slumber), I decided not to leave in case my baby boy woke up and gets scared that no one was nearby for him. Realizing I technically had everything to make pasta dough and the filling (sausage/Parmesan/herb) tortellini, I just started getting to work. My husband was pleasantly surprised at the last minute decision. Twas more effort and back ache, but it was worth it. ❤️❤️❤️❤️

Thank you for saving the cat. I own 9 and had 18 at the most. Most were feral and they have all turned out to be wonderful, probably because I take care of them and love them constantly. When my son was a baby, Mariah the cat would sit vigil in his crib and the two of them were inseparable. She lived until 18 years of age. To this day at 26 years of age, he loves cats and appreciates them and always needs to pet one.

Happy Christmas, Kylie. Your exacting discernment, love of the authentic, and boundless energy are incredibly delightful to witness. Some details I included in my celebrations this year: mini minced-fruit tarts (like English mincemeat, full of aromatic spice and citrus zestiness, made with figs, dates, apples, apricots, and raisins); a salmon dinner with mashed potatoes, buttery carrots, cranberry-orange sauce and a mixed green salad. We read aloud both "A Christmas Memory" by Truman Capote and "A Child's Christmas in Wales" by Dylan Thomas; I baked tollhouse cookies and sugar cookies that I decorated with royal icing with my 81-year old father; we hung an antique string of tiny glass Christmas balls across a modern horizontal mirror that hangs in our mid-century living rooom; we burned a berry and balsam candle, incense, and two tapers made to look like candy canes which I nested in sprigs of fresh holly and berries, cut from our own bushes. Dear Kylie: it’s now two days pass Christmas and I am just now watching the last three of your videos. How special this holiday is for you despite all the craziness in getting things done (the apple pie looked so scrupulous!) especially now as a mother and then having Guido, your parents and sister to enjoy as well. Christmas is indeed a time for reflection, gratitude for all we have rather than what we don’t have, and faith and hope that the future will bring us fulfillment as we face the new year. Your videos bring so much pleasure even with your challenges in renovations because your positive attitude and your determination to succeed at what you and Guido do never diminishes.
