Hi TC, I'm going to be 72 this week, and you expressed my sentiments exactly. I always learn from Kylie's cooking. I have been cooking and baking all my life, but I always learn something new from Kylie. For example, after seeing Kylie use olive oil in her cooking and sauteing, and knowing how health conscious and knowledgeable about wholistic nutrition she is, I decided to research in greater depth the issue of whether or not it is safe to heat olive oil because I had learned from a doctor that it is not worth the risk of creating dangerous changes to the oil. But, after my research, I found that Kylie is right. As long as the olive oil is extra virgin, stored in a dark glass bottle, and preferably organic and from olives that have been picked relatively early, than it is not only safe but actually adds healthy elements to the vegetables and food. So, now I'm going to use olive oil and try making her wonderful chicken soup recipe.

The difference between stock and broth: stock is a base and generally unsalted for future production and reduction (what you did for the chicken as a home cook is fine) Broth can stand on its own or with a few additional embellishments. Then there’s soups….😉 Love your content.

You are so right! I have the old wood stove of my great-grand mother and cook the soup for hours on it, similarly to Kylie's recipe, but of course "completely different". While watching the video I was constantly hearing my grand mother commenting about what Kylie was doing "wrong". ;-) Those days, when I cook the soup for hours and make the pasta, the house smells like my great-grand mother's home and all 5 generations of women are connected. I hear them, I feel them, chatting and singing and commenting. So much love!

I love your videos. We live in Southern New Mexico we own a small mexican bakery. I too stand for simple and handmade. Unfortunately someone set our bakery on fire February 11.. it sits in ruins but my husband and our 9 year old and I found a food truck and we sell homemade food and pastries behind our ruined bakery. Someone tried to stop our blessings but since then we have been blessed even more. Sitting at home just in the unknown watching your videos and trusting in God has given me peace. Thank you.

I never went to culinary school but I was fortunate to have had a wonderful mother who was born in Udine in northern Itayl and she taught me how to make this style of soup! ~It is my go to when I am feeling run down or tired or have a busy week so I make a big batch and keep it in the fridge or freeze it! I sometimes add a little parmesan over the top as my son loves the cheeses as it melts. Thank you Kylie for sharing this delicious recipe as your passion reminded me of how my beloved mother used to love nothing better than to cook from her heart for her family as the food was delicious every mealtime! With 4 kids 3 dogs and a husband who was also mediterranean (Malta) my mother was in her element so even though it was hard work, she never complained as she was doing what she loved! She lived to be 89 (6 days before her 90th birthday) and I have missed her very much these past 2 years but your channel always feels like I am home so I thank you for all your hard work and amazing creativity as it's truly appreciated. I also can't wait to see how your beautiful floral skirt turns out, as I love sewing too and you inspire me to start making my own clothes again! Blessings to you Guido and both your families!

Yum, ill try it! I use more asian ingredients usually, like ginger, garlic, Herbs, and soy sauce and sesame seed oil and chinese 5 spice ( apple cider vinegar & lemon , green onion to serve). So this will be fun to try.

I love making chicken soup for my family. I use big chicken wings, it's surprising how much meat there is, but I make a HUGE pot and put angel hair egg noodles in at the end, only enough for each serve. I can smell your gorgeous soup from Australia. Bless.

I make soup from scratch also. I add 1 tablespoon of apple cider vinegar to help leach out the collagen in the bones(I only use organic free range chickens). You can tell when it’s refrigerated it gels up with all the collagen gelatin. I make a lot of broth and freeze it to use for cooking recipes later. I love the process of cooking from scratch, from the selection of produce to the actual cooking to enjoying the taste.

Hi Kylie, this is the second time I have seen someone put chicken pieces in a frying pan and fry it before making the broth. Supposedly it brings the flavor out more intense. I must give this new way of making homemade chicken soup a try. I really love the eggy pasta you made. I also never used a red onion before to make soup. I could not add that much salt because of the blood pressure I have but wow and lemons? I have tried the lemons before in Greek Chicken soup. I know how Guido is feeling! I just moved to Florence and for Lent this year, I started counting my macros so I have a perfectly balanced protein, carbs, and fats ratio each day, but it has been so hard surrounded by so many delicious carbs of pizza and pasta haha! I love chicken soup made from scratch. I usually use a roasted chicken that we had for dinner, then use the remains to make the broth. I always cut the chicken in blocks but now after watching you, I will add the chicken after I shred it. Soup nourishes the soul. Thanks for sharing 😍😘

I loved this episode. I make my own version of this for my family for years and years and I learned some important tips like boiling it down more for more flavor and browning the chicken (my mother did not teach me this!) The lemon juice is another ingredient I lacked and will add next time I make which will be soon because you made it look so good! OMG! You and Guido are the cutest!❤️ I love making chicken soup, it’s so comforting. In Argentina we make “puchero” which is a beef soup with all fresh vegetables and it’s funny what Guido said about how they eat soup in Italy because we eat it like they do. We have the broth with noodles and eat the meat and vegetables separate but my husband puts mustard on the beef and olive oil on the vegetables. I am gong to try making your soup. Gracias!!

A fun tip: my mother-in-law makes amazing chicken soup like you! The first time she served me some she sprinkled the top with Mozzarella cheese! I almost died thinking she had ruined it! It was the best thing ever! I've never eaten chicken soup since without adding it. I've turned down chicken soup because I had no Mozzarella to put on it. My children now love it so much, they cut up Mozzarella sticks to mix in and melt in it. It comes out like chewy chicken pieces and I offer it to vegetarian friends who want a soup like it. It's scary adding something new you are scared may ruin it but I have yet to meet someone who tried it and didn't love it! Every time I think about it I remember how long a adamantly refused to try it. I wasted so much time! Lol

that looks delicious - I think that the best way to get flavour is to cook the chicken in the pan first and then add it to the stock - just yum!

Another delicious feast. I love chicken soup and I will now incorporate your recipe. Your soup looked like heaven in a bowl. I cannot eat most solid foods as a result of numerous surgeries but chicken soup is my salvation. It feeds my soul and now I have your elevated recipe to make it even more wonderful. Magnificent…. I promise- I do thing same exact thing EXCEPT- I haven’t used the fennel- which I will because I grow it & the fresh pasta. Looks AMAZING… definitely will be making a pot this weekend. Thank you so much, Kylie. I was thinking- bet she doesn’t pull whole peppercorns or lemon… AND YOU DID !!!! Must be the Greek in us that loves the rich, layered flavors.

So exquisite ! I love making fresh soups , stocks or broths . In Canada I feel like we need it . Lol . Have you ever tried to add an anise star … it brings out a sweet flavour . Garlic all the way but I love how you chopped the veggies so finely . I could taste it all !

I always love your videos for their great cinematography. When it comes to content, I like the ones about the DIY and restoration work you do. I'm not so much interested in the cooking and recipe videos, but I play them nevertheless, mainly because I know this is a way I can support you.

Kylie a tip to clean your pot: Hot water, vinegar and baking soda. Put it in a container big enough to cover it and Soak it for one day and the next day it will be so clean. If not a little elbow grease. I like your new camera it’s so much better. Things look closer and realistic. 👍
