Need to brown the flour to get a nutty flavor and not a raw flour taste. Using 2% milk thins out the half and half to just a bit heavier than whole milk. You might as well just add whole milk.

My dad was in the Air Force and he made the same shit for me and my brothers. Growing up. I didn’t know what sausage and gravy was until I was in my twenties. I’m like “this is shit on a shingle…” and my friends would give me funny looks. And we ate it on toast as well. The only part is that I was doubly wrong. Yes, they call it shit on a shingle but the original shit on a shingle was made using chipped beef. I thought maybe I was just taught wrong growing up until I read this comment. You ate it the exact way I did and called it SOS too.

😋 but I always remove the cooked sausage on a plate with a napkin then add the flour to the sausage grease in the pan and cook that flour until it’s golden brown then add the milk stirring constantly and add back the sausage cook it til done ✅

The secret to amazing gravy, is a bit of real creme and a premium sausage. And by premium, I don't mean expensive name brand shit, I mean some local butcher shop, high fat, well seasoned, breakfast sausage. No amount of salt and pepper is going to save a low quality sausage.

Heard about this uniquely US dish so often. Never really felt too curious about it. But out of the blue today I thought let's have a look, see what it is and how it's done. Like any Australian chef, raised true from convict ancestors, I'm proudly stealing this to add to our multicultural melting pot of stolen foods we love. Hope you won't mind if I change it up a bit, try some crispy pork belly or well seared little cubes of beef instead of the ground meat, maybe hit it with some south east asian spices which I feel about the same way you seem to feel about hot sauce. It goes in everything, right?
