Those are so easy to make, great choices! Regarding the chicken and rice, there is a peruvian dish were you add corn kernels, sliced pimento and instead of using plain water, you would blend water and cilantro. The dish is called "arroz con pollo", very yummy. We serve it with boiled potatos. To avoid overcooking the chiken, you can remove it before the rice is done. You can also reserve just a bit of the liquid the rice is being cooked on, and add that when serving, since the rice may also get a bit dry.

@@gegeschannel8836 yes, cilantro is soooo flavorful... But it can be a bit difficult to digest. Nowadays many recipes substitute some of the original amount of cilantro with spinach, just to make some dishes more gut friendly, with a cost in flavor. This also applies to basil heavy meals like pesto. I usually use one third spinach to make basil pesto....

Made the first soup for dinner tonight, and it's delicious! The only changes I made was a can of coconut milk instead of cream, peas in place of kale, and some smoked paprika. So hearty and satisfying!✨✨

Made the zuppa Toscana soup for dinner with some cheesy bread on the side and OMG this was so delicious!!! Super easy, I have been scouring your site for one pot meals these are perfect for winter and are just easy so we can spend time together rather than making a full blown three course meal and cleanup. I would love to see more one pot skillet or soup/meal ideas!!
