Orzo risotto is in my weekly rotation. It’s an open canvas. I usually add a bunch of spinach that started to wilt and some goat cheese. It’s creamy delicious !

My next venture is book recipe risotto! Now I am inspired to look at orzo as a a sub. Anyone have a different coinage for what this recipe is using called orzo? I grew up eating it quite often, just never called it orzo until about the last few years or so. Thanks Cafe Hailee!! Incredible recipe here too tough to ignore..

My nonna never uses arborio rice, it’s way too mushy. We like using Japanese sushi rice in our risotto. The texture is so much nicer
