Not sure why all the negative comments. This will be my 2nd year making this sauce just as chef Ramsay shows on the video, and my family loves it! PROTIP: if you find yourself burning the sugar when caramelizing, start with sugar and add a bit of water. Its not as professional but as the water boils it leaves you with an easier way to caramelize the sugar.

For those of you living in countries where you can't get fresh cranberries (like me - Sydney Australia) I made this recipe today. I substituted the 250g cranberries for 200g pitted chopped fresh cherries, and 50g dried cranberries. Tastes delicious!

Ingredients: 1. 150g or 2/3 cup of caster sugar 2. About two to three star anise 3. Four cardamom pods 4. Small bowl of fresh cranberries 5. Two apples 6. Pinch of salt and pepper (about 1 teaspoon) 7. Port wine 8. Orange zest/fresh orange juice EDIT//Nov. 21, 2021: you guysssss! Thanks so much for the acknowledgment. Quick disclaimer: I have no memory of typing these ingredients, but knowing me I’m SURE I tried my best to be as accurate as possible. I’m no professional, so if something doesn’t add up or make sense, please help each other or just ask google lol! Also, I’m sure it’ll be fine if you improvise a couple things(the recipe isn’t too complex). Happy Holidays and I wish you all a wonderful sauce 😊

INGREDIENTS Serves 6 150g caster sugar 2 star anise 4 green cardamom pods, lightly crushed 250g fresh cranberries 2 apples, peeled, cored and chopped Sea salt and freshly ground black pepper 60ml ruby port 1 orange, zested and juiced COOKING INSTRUCTIONS Put a heavy-based pan over a medium heat and add the spices. Allow the sugar to melt (without stirring) and turn a rich caramel colour before adding the cranberries and a touch of seasoning. Cook the cranberries briefly so that they just start to soften, then add the apples and cook for a further 3-4 minutes. Toss regularly to coat all the fruit in the caramel. Pour in the port, reduce the heat then stir in the orange zest and juice. Bring to a simmer and cook for 10 minutes, stirring occasionally, so that some of the cranberries and apples break down completely and thicken the sauce. Transfer to a warmed serving dish, discarding the star anise and cardamom pods. If not serving immediately, cool and keep in the fridge for up to 3-4 days. Warm through gently to serve.

@@sarahm.327 it's like halfway between white sugar and powdered sugar i just used regular white sugar, it was fine if you have a mortar and pestle or a spice grinder you could throw the sugar in there to grind it up a little finer, but that's all caster sugar is

@@mercedesramos1660 na, honestly no need to caramelize the sugar, ive tested it, unless you like it extremely bitter use the sugar 1cup to 12oz cranberries and do not caramelize it

I followed (yes guys FOLLOWED) the recipe around an hour ago and I must admit the end result tastes absolutely fabulous and I am sure it will only get better for tomorrow. As for all the negative people on here, don't worry guys as McDonald are opening 54 restaurants in the U.K. On Christmas Day. Enjoy your Mcchicken sandwich won't you.

I've seen a ton of comments about this going wildly wrong very quickly.. I'm a chef and my first batch was a bit scary! Here's a missing point that is VERY important.. 1. Make sure your cranberries are at least room temp or they will cause the hot sugar to seize up and get rock hard. 2. Stand back.. I have a lovely sugar burn on my face and fingers from this and I had it off the heat while adding 1/2 the berries and then folded in the last. They will start to break down and the acid will cut the sugar. 3. For me, the large slices on the apple are too big. My second batch I sliced and then sliced again, to about batone size.. think a large match stick. The apples breakdown faster and the finished presentation is much more attractive. Overall.. I love this recipe. Use a good port.. fresh OJ with no pulp and keep your distance when adding those cranberries! This is going to be devine on a turkey.. and turkey sandies! @@garrettwhite0051 mine did, to a lesser degree as well. Keep cooking band adding the rest of the ingredients. The acid that is released from the cranberry breaks the sugars down and the hardened sugar will create the sauce. Hope that helps.

I make this every year BY DEMAND for Thanksgiving! Cranberry sauce used to be something no one bothered with this recipe is ADDICTIVE! My husband was very proud of me when his grandfather was literally eating it out of the serving dish at the end of the night. I always give Gordon Ramsey credit, i always get that "ohhh this is a Gordon Ramsey recipe??" Lol

I just made homemade cranberry sauce for Thanksgiving. I used the “Serious Eats” recipe with orange peel and cinnamon. It’s delicious. But I’ve been wondering… Yes, I will serve it proudly on my Thanksgiving table but I could never figure out what it goes well with? If it’s just a condiment next to your Turkey most people don’t eat it. This year I’m going to try something different. I am going to make homemade biscuits using a simple Thomas Keller recipe online. I’ve made them before. Simple and delicious. But this time when my guests sit down at the table I am going to first serve them hot biscuits, fresh from the oven, butter, honey, and cranberry sauce. Maybe I will serve spiced hot wine with this too. This will be the appetizer before the rest of the dinner comes out. Yes, it’s different from the typical charcuterie platter but I’m tired of sitting down for Thanksgiving dinner and already being full. Who doesn’t like hot biscuits? Anyway, I want to make the cranberry sauce the star of the show, not just a condiment people forget about. The reason why I’m posting this is I’m wondering what other ways I can make cranberry sauce shine rather than just condiment on the side? Please leave me your suggestions.

It’s not necessary to the flavor. Sometimes I add alcohol and sometimes not. I’d say the whole anise and cardamom really make the biggest difference in flavor, as well as the caramel. I made some this week without the orange juice and with vermouth instead of sherry and it was still great. Something I’ve learned after making it over 10x is to put a lid on it if you have trouble with the cranberries incorporating into the caramel. Mine never looks exactly like his when I add the berries-it gets hard and I end up with big chunks of caramel. But a lid on top, especially after adding the apples, creates enough condensation and steam to help dissolve the caramel chunks.

@@ehale1246 you can remove the stars as you eat them, and as for the pods, I usually discard the husk before tossing it into the pan anyway and the cardamom itself should be small enough to break down and not need removing.

Ive always made Rachel Ray's cranberry sauce with orange, cloves, cinnamon sticks, fresh ginger... but ALWAYS LOVE Gordon's cooking and will have to try this with apples, star anise, cardamom, and port wine...yummy

@@RICHARD187169 no, it’s supposed to be like a sweet cranberry with a hint of spicy. If you overcook the sugar it gets bitter.

how about black cardomoms, for me they are the king of spices - wonderful chocolate, smoky, earthy, minty flavours - just use the crushed seeds and add at the end of the cooking. I'm not saying they would work in this sauce but I think its the spice of the future - essential for a proper korma for example

Maybe just feel the bag and see if the cranberries are really firm, I guess he means if they bounce then they’re very firm and fresh. Any fruits and veggies will get soft and soggy when they’re older

Delicious, I made it for Thanksgiving the night before and today with the food that was delicious. I didn’t have cardamom so I added a cinnamon stick and also a little bit of maple syrup.

I make it every year 8-10 batches takes a bit of time which i give to family and friends they all love it, lovely on the turkey sambos , I do mini portions bout 200g and freeze and use during the yr when havin turkey 😊

Peter in the grocery store today told me to check out this video...I may be convinced to eat turkey with cranberry sauce after watching this...or the sauce on its own..or....maybe over Maple walnut ice cream...looks good anyway...thanks for the recommendation.

core, peel, and thinly slice 2 apples, set aside add 150g caster sugar to pan add star anise lightly crush 4 cardamon pods and add ( bring pan to medium heat? he didn't say. be careful not to burn the sugar ) wait for sugar to melt and form a dark caramel add cranberries let caramel blister the cranberries after cranberries have broken down, add apple add salt and pepper deglaze pan with port add zest of orange add juice of orange cook on low heat for 5-10 minutes can make 3-4 days ahead kept in fridge, then bring up to room temperature to serve

I loved it but the next time I make it I will eliminate the zest. It made it a little too tart for my taste. Also, don’t forget to remove the Star Anise and the Cardamom before serving.

Please advise against using frozen cranberries! I had a beautiful caramel going on and I dumped frozen cranberries in it and suddenly the caramel became huge globs!

Yes, this seizes the sugar. Cranberries should be room temperature.

You could go with unsweetened fruit juice. Concord grape juice with some lime zest added, cranberry juice with some lemon juice added, or grape juice concentrate. Substitute orange juice or apple juice for lighter ports. And perhaps a splash of vinegar for substituting the “alcohol” notes depending on the recipe.
