Here is why this is my new favorite cooking channel - The RECIPES! And, of course, Natasha. I love cooking shows but rarely are the recipes that great when I try them. America's Test Kitchen has been the most reliable... until now. We first tried the Beef Stroganoff - Amazing! Then the apple pie - Delicious (even with no brown sugar)! Almost every recipe was a hit (I like my chicken alfredo better but I still learned things from her video that made mine better and easier). Bravo and thank you so much for the resources on the website. They REALLY help!!! You are a gift.

@@nadoushable If you are not able to find Marsala wine, a Madeira wine would also work. If alcohol is a concern, most of the alcohol is cooked out in the pan so you just get the added flavor and the sauce ends up with an insignificant amount of alcohol. If you are looking to make it wine-free, you could just use more broth and boil that down, but the flavor profile wouldn’t be quite the same.

One of the things I love about Natasha (outside of her personality and wonderful recipes!) is not having to endure way too much time watching someone slowly cut and cook every step of a recipe! The videos are engaging and fun and don’t take a lifetime to watch to be able to prepare a magnificent meal! You have found the niche in recipe videos - love them!

Natasha, I've previously made Chicken Marsala from a Veal Marsala recipe with shallots. Your Creamy Chicken Marsala was so flavorful (without the shallots) it had me dancing and singing! It's one of the best tasting recipes I've ever made. I modified slightly (white mushrooms, off the shelf supermarket Marsala Wine ). I'm about to cook again tonight adding a pinch of Cayenne Pepper for a bit of heat and increasing the sauce amount.

i made this dish tonight and everyone loved it ! HOWEVER, it took me longer than 30 min!!! of course i made more than 4 cutlets, and that took extra time… i tried to adjust the liquids to accommodate the extra chix, and did ok w/ that… but will do a little more next time!! i have made many of your recipes and have lived them all!! i love your cute bubbly personality and your love for food!!

I just made this for my family of 5. I was scared when the alcohol was cooking out of the wine but as soon as it was almost gone and the chicken broth and the cream was added the smell in my house was incredible. I served it over angel hair pasta and let me tell you something THIS WAS AMAZING!!! I have your cookbook and will be working my way through it. I would use chick peas/garbanzo beans in place of the chicken, they are good in a cream based sauce, also vegetable stock in place of chicken stock.

We’re having this tonight, October 6, 2020, while watching for Hurricane Delta to either hit or miss us in Pensacola, FL. This was the second time we fixed it and it came out great - I took a little more time to pound the chicken, and used a high quality dry Marsala dinner wine (Sheffield Silver Lane, oak mellowed) instead of just the Holland House cooking wine from the grocery store. - made a big difference in the taste. The alcohol will evaporate. If not, you can buy de-alcoholized wine at the supermarket, or you can use dry apple juice. It will not be the same flavour, but it will be close.

Alcohol has a lower boiling point than water, and thus evaporates faster, it's true, and a lot does evaporate, but just to give an example: if you bake or simmer food with alcohol for even as long as 15 mins it still retains 40% of the alcohol, and it actually takes about 3 full hours of simmering to fully erase all traces of alcohol...far more than any chicken can handle 😂😂 For most people that doesn't matter, but for religious or alcoholism reasons it does matter to some people, and saying "it evaporates when cooking" can be misleading

I noticed the same thing. If I was to use chicken breast, I would follow Chef John's Food Wishes and use a whole breast. Unfortunately, when you pound; OK, Natasha spanked the thing :-), a half breast and get a golden crust on both sides it will be dry. If cooked more it will usually be tough. I will incorporate this recipe and Food Wishes, as I liked both. I will probably use a whole breast or pound a boneless thigh to make this one. I am certain it was tasty, but it definitely was dry and appeared chewy.

Rule 1: never cook with untied hair Rule 2: never use alu foil for food , especially not on hot food since it absorbs much faster (cancerous , chemical reaction)
