Looks really, really delicious, Rik! I usually make a turkey pot pie with my leftover turkey, but this recipe will be a nice change! I'm looking forward to it! Have you ever tried cornbread dressing instead of dressing using bread? Cornbread dressing is a popular Thanksgiving or holiday staple across the southern US. Yum!

Thank you for more uses for turkey. My bulk meat supplier had frozen ground turkey thigh meat at an attractive price, thus I'll improvise a little. I've learned to substitute because necessity is the mother of invention. Glad I watched your mixed spice and herbs videos.

Perfect for leftovers! I must say I have always put left overs in a sauce, but… your sauce looks amazing. I have never put any stock in the sauce or herbs.. don’t ask me why, just a lack of confidence I think! Thanks Rik, this will be on my after Christmas table!!! Incidentally, in the news extra today it is said that mushrooms are really good for you, lots of vitamins, low calorie, plus other benefits… and then there’s the spinach! Perfect! ❤
