I made this tonight in my 3 qt. electric pressure cooker and it was awesome!! Here are the only changes I made...I used only 1 pk. of cream cheese, about 6 asparagus stalks (cut in half), and I used chicken legs. It was so awesome that I had to eat two bowls and I had plenty left over.

I'd never have thought to add cilantro & red cabbage; so much flavor, color, and nutrition! I will definitely make this, but I'm going to brown the thighs with the onion, & add the garlic at the end to maximize benefits. Yum! :)

Great recipe! Thank you!!! Just an fyi: the ounces on fluids refers to liquid measurements and has nothing to do with the weight. Ie: 8 oz is a cup, not a half pound..... you could have 8 oz of cream or 8 oz of water. Different weights. That's a why some pkgs state 8 "fluid ounces" - and 16 oz = 2 cups which = a pint, 4 pints = a quart, 4 quarts = gallon, etc. Thanks for all you do! Love you!!!

I would definitely recommend turnips to replace potatoes, depending on your tolerence for root veg. In fact, I'll add that to this soup instead of cabbage if they have any. Turnips are one produce I've had a hard time finding in all my nearby stores lately, but I like them better than cauliflower for my potato substitute. They bring more flavor to recipes than potatoes, but they're still mild and they have a somewhat similar texture and mouth feel. I save the cauliflower for my rice alternative.

Mine is cooking right now, but I have resisted buying an Instapot because I’m just stupid overloaded with kitchen stuff, so it’s in my ancient crockpot. Neisha, your recipes are forcing me (just kidding, sorta’) to look at Instapots again. This recipe is really looking great; can’t wait till it’s ready to eat! Glad you shared it! Came back to add... unless your cream or milk is moldy or slimy or way old, it's great to cook with! Been baking with it, making soup, even in mashed potatoes... it's perfectly fine, which sounds awful since it's TOTALLY undrinkable, but if it still looks okay, it's okay!!

I have discovered that there's some texture problems I have with fat & skins, triggering a wicked gag reflex 😥 It's put an interesting twist on my transitioning to ketocarnivore. I have also discovered that I can work around that by frying/crisping fat & skins. As such, for this recipe, I would likely remove the chicken skin (& any large "globs" of fat), frying them up separately as I would bacon. I'm curious about how well this recipe would work with a small whole hen 🤔 I've got a couple of cornish game hens in the freezer that I was contemplating on cooking in my Instant pot contraption (recently aquired, so I'm still learning with it).
